1/3 cup/80 milliliters plain Greek yogurt
1 cup/220 grams light or dark brown sugar
2 large eggs

2 cups/255 grams all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon fine sea salt
1 cup/135 grams finely chopped chocolate or mini chocolate chips (see Tip)

Steps:

  • Heat the oven to 350 degrees. Lightly grease a 9-by-5-inch loaf pan with nonstick spray.
  • In a large bowl, mash the bananas coarsely using a fork. They should be fully broken apart, but it's OK if some larger lumpy pieces remain. Whisk in the melted butter, yogurt, brown sugar, eggs and vanilla until well combined.

3 tablespoons chopped walnuts or pecans
1 tablespoon granulated or coarse sugar
1/8 teaspoon cinnamon

Steps:

1/2 cup kerry irish gold sweet butter
3/4 cup brown sugar
1 egg
1 cup unsifted stoneground whole wheat flour
1/2 cup unsifted unbleached white flour
1 teaspoon baking soda
3/4 teaspoon sea salt
1 1/4 cups mashed ripe bananas (2 large or 3 small)
1/3 cup buttermilk or 1/3 cup yogurt

Steps:

  • Preheat oven to 350 degrees.
  • Cream the butter and sugar together until very light. Beat in the egg.
  • Sift together the whole wheat flour, white flour, baking soda and salt.
  • Combine the bananas and buttermilk, stirring just enough to combine well.

1/2 cup canola oil or 1/2 cup vegetable oil
1 cup sugar
2 eggs
3 ripe bananas (the more brown they are the better)
2 cups flour
1/2 teaspoon baking powder
1 teaspoon baking soda

1/2 teaspoon vanilla
3 tablespoons milk (I use half & half)

Steps:

  • preheat your oven to 350 degrees, grease a 13X9 pan, then peel your bananas and mash them in a small bowl, set aside. next take out a large bowl and put the vegetable oil in, gradually add the sugar, stirring after each addition. then add the eggs and stir until thoroughly combined and slightly fluffy. then you mix in the mashed bananas, set this mixture aside. combine all of the dry ingredients in one bowl stirring until everything is mixed in, then gradually add the dry ingredients to the wet mix. (the mix will be a little dry, so don't worry, you didn't do anything wrong!) next add the milk (or half & half) and the vanilla.* stir the mixture and then pour into the pan. sometimes when I make this recipe there's a little bit too much batter in the bowl, so make sure that you don't fill the pan too full! it only needs to come up slightly above the half way point. I usually make a few muffins out of the extra.
