2 cups sugar
1 cup butter
4 eggs
8 ounces pina colada yogurt
1/2 cup milk
1/4 cup Kahlua or 1/4 cup milk
2 teaspoons vanilla extract
2 teaspoons lemon juice
2 cups bananas, mashed
3 1/2 cups flour, self-rising
1 teaspoon baking powder
1 cup walnuts, chopped (optional)

Steps:

  • Preheat oven to 350°.
  • Grease and flour two loaf pans.
  • In a large bowl, using an electric mixer, cream together sugar and butter.
  • while mixing, add eggs, one at a time.
  • blend in the yogurt, milk, Kahlua, vanilla and lemon juice.
  • From here on only use a spoon to-- add the mashed bananas.

3 large eggs
1 tablespoon freshly grated lemon zest
1 1/3 cups mashed ripe banana (about 3 large)
3 tablespoons sour cream
3/4 cup chopped macadamia nuts
1 cup sweetened flaked coconut, toasted lightly and cooled

1 cup mashed very ripe banana
1 (6 ounce) container yoplait original 99% fat free pina colada yogurt
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
4 Nature Valley banana nut crunchy granola bars, coarsely crushed (2 pouches from 8.9-oz. box)
1/4 cup flaked coconut

Steps:

  • Heat oven to 350°F (If using dark pan, decrease oven temperature to 325°F).
  • Generously grease 9x5-inch loaf pan with shortening or spray with cooking spray.
  • In large bowl, beat sugar and butter with electric mixer on medium speed until well blended.

1 (11 ounce) box vanilla wafer cookies
2 medium bananas, sliced, or more to taste
¼ cup toasted shredded coconut

3 cups sugar
