1 tablespoon tomato paste
2 teaspoons Worcestershire sauce
2 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons ground coriander
1 teaspoon paprika
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1 1/2 pounds ground beef chuck
Kosher salt and freshly ground pepper
1 15-ounce can diced fire-roasted tomatoes
1 to 2 teaspoons hot sauce
12 hard taco shells
Shredded iceberg lettuce, shredded cheddar cheese and/or pickled jalapenos, for topping

  • Add the beef, 1 teaspoon salt and a few grinds of pepper to the skillet. Cook, breaking up the meat, until no longer pink, about 5 minutes. Add the tomatoes, hot sauce and 1/4 cup water and bring to a simmer. Reduce the heat and cook, stirring occasionally, until the juices are slightly thickened, 5 to 7 minutes. Season with salt and pepper.

Categories     Mains

Time 2h45m

Number Of Ingredients 19

1 dried chipotle chile
1 to 2 dried chiles (such as ancho or guajillo)
1 cup cold water
About 2 1/4 pounds braising steak (such as chuck shoulder or blade, cut into 1/2- to 1-inch (12- to 24-mm) dice)
Mild vegetable oil or olive oil (for frying)
1 large garlic clove (minced)
2 to 3 tablespoons all-purpose flour
1 tablespoon chile powder
2 teaspoons dried oregano
2 teaspoons ground cumin
2 teaspoons dried coriander
1 tablespoon granulated sugar
Sea salt
Freshly ground black pepper
1 to 2 fresh chiles (such as jalapeño, minced)
1 1/2 cups beer (such as Modelo)
1 beef bouillon cube (optional)
Small corn or flour tortillas
Lime, crème fraîche or sour cream, chopped cilantro, chopped onion, pickled red onions, diced avocado, and Cheddar cheese

Steps:

  • Remove the stems and seeds from the dried chipotle and ancho chiles. Toss the chiles in a small saucepan, cover with 1 cup (237 ml) water, and boil for about 15 minutes, until most of the cooking liquid has been absorbed.
  • In a large saucepan or Dutch oven over medium-high heat, warm 1 tablespoon oil. Add 1/3 of the beef and cook until the meat is well seared on each side, 5 to 7 minutes. Transfer to a medium bowl and repeat with the remaining meat in 2 more batches, adding 1 tablespoon oil to the pan after each batch. When the meat has been seared, toss the garlic in the pan and cook until golden brown on all sides.
  • Return the seared meat and any juices that may have collected in the bowl to the saucepan or Dutch oven. Sprinkle the meat with flour, chile powder, oregano, cumin, coriander, and sugar. Season with salt and pepper to taste. Toss the fresh chiles into the saucepan, too.
  • Pour the boiled chiles and their cooking water into a blender or food processor and purée. Pour the chile mixture over the meat and spices. Add the beer and the bouillon cube, if using. The liquid should just cover the meat. Cover and gently simmer the meat for at least 2 hours, or until the meat is tender and the sauce is slightly thickened and silken.
  • Serve the beef chili with the tortillas, wedges of lime, crème fraîche, or sour cream, cilantro, onion, avocado, and grated cheese.

If you like really spicy beef chili, this is a quick and simple recipe to try. I don't include measurements for some of the spices as they should be to taste (the more, the better for me). I taste the chili throughout the simmering process and add more spice as I go.

750 g ground top quality beef
1 tablespoon plain flour
1 teaspoon ground cumin
1 teaspoon chili powder

salt, to taste
fresh ground black pepper, to taste
lettuce leaf, to serve
50 g stuffed green olives
8 ready-made taco shells
150 ml sour cream
paprika, to dust

Steps:

  • Grate the cheese coarsely, peel and finely chop the onion and garlic; gently heat the ground beef in a non-stick pan or wok, stirring until the juices start to run.
  • Add the onion, garlic, flour, cumin and chili powder, mix well and cook, stirring, for 3-4 minutes, or until the meat is brown; stir in the tomatoes and stock; bring to the boil; simmer for 25 minutes or until the sauce is thickened and season to taste.
  • Meanwhile, shred the lettuce and slice the olives; cover and chill until required; and gently warm the taco shells according to the packet instructions.
  • Press a little lettuce into each taco, top with mince then sprinkle over with olives and cheese; serve the tacos with spoonfuls of sour cream dusted with paprika.

Tips:

  • Choose the right beef: Select chuck roast, ground beef, or stew meat for a flavorful and tender chili.
  • Brown the beef: Browning the beef before adding it to the chili enhances its flavor and helps remove excess fat.
  • Use a variety of chili peppers: Combine different types of chili peppers, such as ancho, guajillo, and chipotle, to create a complex and flavorful chili.
  • Add aromatics: Sauté onions, garlic, and bell peppers in olive oil before adding the beef to build a flavorful base for the chili.
  • Use a flavorful liquid: Use beef broth, chicken broth, or even beer as the liquid base for the chili to enhance its taste.
  • Simmer for a long time: Allow the chili to simmer for at least an hour, or even longer, to develop its flavors and tenderize the beef.
  • Season to taste: Adjust the seasonings in the chili to your preference, adding more chili powder, cumin, or salt as needed.
  • Garnish before serving: Top the chili with shredded cheese, sour cream, diced avocado, and chopped cilantro for a delicious and visually appealing presentation.
