BERRIES WITH BANANA CREAM (FAT FREE)

Berries With Banana Cream (Fat Free) image

This is a slight adaptation of a recipe from one of my favorite cookbooks, "500 Fat Free Recipes." This is a lovely end to your meal that you can feel reasonable eating. Healthy and decadent tasting though still helping you get all your fruit servings. I used raspberry flavored honey which was lovely, but any honey will be good here. The original recipe called for 2 cups strawberries but I really enjoyed the strawberry/blueberry combination.

Tips:

  • Use ripe berries. The riper the berries, the sweeter and more flavorful they will be. If you can, pick your own berries from a local farm or farmers market.
  • Choose a variety of berries. This will give your dish a more complex flavor and texture. Some good options include strawberries, blueberries, raspberries, and blackberries.
  • Make sure the bananas are ripe but not overripe. Overripe bananas will be too mushy and will not hold their shape in the dish.
  • Use full-fat coconut milk for the best flavor. If you are using canned coconut milk, be sure to shake the can well before opening. You should also chill the coconut milk before using it.
  • Do not overcook the berries. Berries only need to be cooked for a few minutes until they are softened. Overcooking them will make them mushy and bland.
  • Let the dish cool slightly before serving. This will allow the flavors to meld together and the dish to thicken.
  • Serve the dish with fresh mint or berries for garnish. This will add a pop of color and flavor to the dish.

Conclusion:

This Berries with Banana Cream (Fat-Free) is a delicious and healthy dessert that is perfect for any occasion. It is made with fresh berries, bananas, coconut milk, and a touch of lime juice. The dish is creamy and flavorful, and it is also gluten-free and vegan. If you are looking for a dessert that is both delicious and healthy, this is the recipe for you.
