I hope you enjoy her recipes as much as we do. I have not made each one yet-so cooking time and servings may vary. Tips:
- Choose the right squash: For this recipe, it's best to use a large, firm squash with a deep cavity, such as a butternut squash or acorn squash.
- Prep the squash properly: Cut the squash in half lengthwise and scoop out the seeds and pulp. Brush the inside of the squash with olive oil and season with salt and pepper.
- Cook the black-eyed peas: Rinse the black-eyed peas and soak them in water for at least 4 hours, or overnight. Drain the peas and rinse them again. In a large pot, combine the peas with water, onion, garlic, and bay leaf. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the peas are tender.
- Make the filling: In a large bowl, combine the cooked black-eyed peas, corn, bell pepper, onion, and spices. Stir in the beaten egg and bread crumbs.
- Stuff the squash: Spoon the filling into the prepared squash halves. Top with the cheese and bake in a preheated oven at 350°F for 30-40 minutes, or until the squash is tender and the cheese is melted and bubbly.
