Number Of Ingredients 13

4 (4-oz) fresh or frozen skinless salmon fillets
1 1/2 cups frozen organic blueberries
1/4 cup finely chopped onion
1 clove garlic, minced
1 teaspoon olive oil
2 tablespoons balsamic vinegar or cider vinegar
1 tablespoon packed brown sugar
1 teaspoon grated fresh ginger
1/2 teaspoon finely shredded lemon peel
Nonstick cooking spray
1/8 teaspoon salt
1/8 teaspoon ground black pepper
Snipped fresh chives (optional)

Steps:

  • Thaw fish, if frozen, and blueberries. For sauce: In a small saucepan, cook and stir onion and garlic in hot oil about 3 minutes or until softened. Add blueberries, vinegar, brown sugar, ginger, and lemon peel. Bring to boiling; reduce heat. Simmer, uncovered, about 15 minutes or until sauce has thickened and reduced to 1 cup.
  • Meanwhile, rinse salmon; pat dry with paper towels. Lightly coat salmon with nonstick cooking spray; sprinkle with salt and pepper. Measure thickness of salmon.
  • Place salmon on the rack of an uncovered grill directly over medium coals. Grill for 4 to 6 minutes per 1/2-inch thickness of fish or until fish flakes easily when tested with a fork, turning once halfway through grilling.
  • Serve blueberry sauce over salmon. If desired, sprinkle with chives.

BLUEBERRY BALSAMIC SALMON

Categories     Fish     Dinner

Number Of Ingredients 6

1/2 cup frozen blueberries
2 tbsp. Raley's balsamic vinegar
2 tbsp. Raley's honey
1 tbsp. Raley's lemon juice
2 salmon steaks or fillets (about 6 oz. each)
Oil, salt and freshly ground pepper

Steps:

  • Combine blueberries, vinegar, honey and lemon juice in a small saucepan and bring to a boil. Reduce heat and simmer over very low heat for 10 minutes. Meanwhile, rinse salmon and pat dry. Brush lightly with oil and season with salt and pepper. Grill for about 5 minutes per side over medium heat. When salmon is cooked to your liking, remove from grill and drizzle with blueberry glaze.

Tips:

  • Fresh, ripe blueberries are best for this recipe. If they're not in season, you can use frozen blueberries that have been thawed and drained.
  • Use a good quality balsamic vinegar. A cheap balsamic vinegar will not have the same flavor or consistency as a more expensive one.
  • Do not overcook the salmon. It should be cooked until it is just opaque in the center, about 5 minutes per side.
  • Serve the salmon immediately with the blueberry balsamic sauce. You can also garnish it with fresh blueberries and chopped parsley.

Conclusion:

This blueberry balsamic salmon recipe is a delicious and easy way to cook salmon. The blueberry balsamic sauce is sweet, tangy, and savory, and it pairs perfectly with the delicate flavor of the salmon. This dish is perfect for a weeknight dinner or a special occasion.
