INGREDIENTS
1 BAKED pie shell
3 med/lg bananas (no speckles! Might not use all, nibble the rest)
8 -12 ounces cream cheese, softened (Can use lower fat version)
1/4 cup sugar (optional -I often leave this out)
1 (12 ounce) container Cool Whip, thawed (I use Fat Free -SO good)
1/2 (21 ounce) can blueberry pie filling (Splurge & get the ones w/ more berries)
Fresh Blueberries (Really adds to the flavor/texture & antioxidants (but screen out any mushy ones)

Steps:

  • DIRECTIONS 1. In large bowl, beat cream cheese & sugar until smooth, fold in Cool Whip. I say 8-12 oz cream cheese, this is entirely at your discretion. 2. Slice the bananas (abt 1/2 " thick slices) 3. Arrange slices all over bottom & sides of pie (cover the shell) 4. Spread carefully over the bananas and smooth. 5. Top with blueberry pie filling & drop fresh blueberries onto the top of filling. 6. Chill for at least 1 hour before serving and Enjoy :) Refrigerate leftovers, use within a couple days. 1 (12 ounce) container frozen whipped topping, thawed

CHEESE FILLING:
4 ounces reduced-fat cream cheese
1/2 cup confectioners' sugar
1 tablespoon lemon juice
1 large egg yolk, room temperature
BLUEBERRY FILLING:
1/2 cup plus 1 tablespoon sugar, divided
2 tablespoons all-purpose flour
1 tablespoon cornstarch
1/4 cup cold water
6 cups fresh or frozen blueberries, divided
2 tablespoons lemon juice
1 tablespoon minced fresh mint or 1 teaspoon dried mint
1 large egg white, beaten

Steps:

  • On a floured surface, roll each dough disk to fit a 9-in. deep-dish cast-iron or other cast-iron skillet. Line skillet with bottom crust. Trim crust to 1/2 in. beyond edge of skillet; flute edges. Line unpricked crust with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack. Reduce heat to 375°., In a small bowl, beat the cream cheese, confectioners' sugar and lemon juice until light and fluffy. Beat in egg yolk until blended. 6 medium bananas
1 lb can(s) blueberry pie filling
8oz pkg cream cheese, room temperature
1 c sugar
1-10 oz frozen cool whip topping, thawed

Steps:

  • 1. Mix in bowl: Cool whip, cream cheese and sugar. Beat at medium speed until smooth. Set aside. Slice 1 1/2 bananas and arrange in pie shells. Pour blueberry pie filling on top.
