2 large very ripe bananas
1/2 cup dark brown sugar
1/4 cup applesauce
2 eggs
1 cup all-purpose flour
3/4 cup ground almond meal
1 tablespoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
2 large golden delicious apples, sliced
1/4 cup honey
1 tablespoon melted organic butter, for greasing
3/4 cup frozen blueberries

Steps:

  • Preheat oven to 400 degrees.
  • Arrange sliced apples on a baking sheet and drizzle honey over them. Bake at 400 degrees for 10-15 minutes until apples are moist and tender.
  • Remove apples from the oven and lower the oven temperature to 350 degrees.
  • In a large bowl, mash bananas and brown sugar until creamy, don't worry if there are a few lumps.

1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup margarine, melted
2 (15 ounce) cans blueberry pie filling (depending on brand the size may vary)
3 bananas
8 ounces cream cheese, softened
1 (2 5/8 ounce) box kraft Dream Whip (use 2 individual packages)
1 cup milk
1/2 cup sugar

Steps:

  • For crust: mix graham crackers crumbs, melted margarine and 1/4 cup sugar in a 9x13 glass pan. Press into the bottom of the pan to make a crust. Chill in the refrigerator while making the topping. (Note: You may need to add a little more melted margarine if the crumbs appear to be too dry, however, you don't want the crust to be greasy.).
  • In a deep bowl, mix cream cheese, Dream Whip, milk and 1/2 cup sugar with a hand mixer until smooth.

CRUST:
1 c flour
1 stick butter, melted
1 c pecans, finely chopped
FILLING AND TOPPING:
1 -8 oz. pkg cream cheese, room temperature
3/4 box confectioners' sugar
1- 12 oz tub of cool whip, thawed
1 can(s) blueberry pie filling

  • 1. Preheat oven to 350 degrees. Mix the crust ingredients together and press into a greased 9 x 13 inch pan. Bake at 350 degrees until crisp, about 10-12 minutes.

12 slices dry white bread, cut into 1/2 inch cubes (about 8 cups, see NOTE)
2 (8 ounce) packages cream cheese, cut into 3/4 inch cubes
1 cup fresh blueberries or 1 cup frozen blueberries
12 eggs
2 cups milk
1/2 cup maple syrup or 1/2 cup maple syrup

Steps:

  • Place half of the bread cubes over the bottom of a well-buttered 13x9x2-inch baking dish.
  • Sprinkle cream cheese and blueberries over bread cubes.
  • Arrange remaining bread cubes over blueberries.
  • In a large mixing bowl, beat eggs with a rotary beater, beat in milk and the 1/2 cup syrup.

1 3/4 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
3/4 c sugar
1/3 c oil
1 egg
3/4 c milk
1 c blueberries, fresh or frozen
FOR THE FILLING:
4 oz cream cheese
3 1/2 Tbsp powdered sugar
FOR THE TOPPING:
1/4 c flour
1/4 c sugar
1/4 tsp cinnamon
2 Tbsp butter

  • 1. In a bowl, combine all dry ingredients. In another bowl combine oil, beaten egg and milk.
  • 2. Add to dry ingredients and stir only to combine. Fold in blueberries.
  • 3. Soften cream cheese and whip. Add powdered sugar and whip until fluffy.
  • 4. Mix flour, sugar, cinnamon and butter with a fork. Place paper liners in 12 muffin tins. Fill 1/3 of batter then add 1/2 teaspoon of the filling.
