Time 1h

Yield 4

Number Of Ingredients 16

2 tablespoons olive oil, divided
1 tablespoon butter
4 (6 ounce) bone-in, skin-on chicken breasts
salt and ground black pepper to taste
2 medium apples, cored and thinly sliced (such as Autumn Glory®)
1 small yellow onion, thinly sliced
1 tablespoon chopped fresh sage
1 ½ teaspoons chopped fresh rosemary
½ teaspoon chopped fresh thyme
½ teaspoon salt
¼ teaspoon poultry seasoning
¼ teaspoon black pepper
½ cup chicken broth
¼ cup heavy whipping cream
2 teaspoons honey
1 teaspoon Dijon mustard

Steps:

  • Heat 1 tablespoon olive oil and butter in a large oven-safe skillet over medium-high heat. Season both sides of the chicken breasts with salt and pepper and add to the hot skillet, skin-side down, leaving at least 1 inch between the breasts to ensure even cooking and browning. Cook until skin is browned, about 6 minutes. Turn and cook an additional 6 minutes until browned on both sides. Transfer chicken breasts to a plate.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Add remaining 1 tablespoon olive oil to the skillet and stir in apples and onion. Cook, stirring occasionally, for 4 minutes. Season with sage, rosemary, thyme, salt, poultry seasoning, and pepper; stir to combine.
  • While apples are cooking, whisk together chicken broth, whipping cream, honey, and mustard in a small bowl. Pour broth mixture in with the seasoned apples and onions and gently scrape browned bits from the bottom using a wooden spoon. Slide chicken breasts back into the skillet, nestling them between onions and apples.
  • Transfer skillet to the preheated oven and cook until chicken is no longer pink at the bone and the juices run clear, about 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

HONEY-MUSTARD CHICKEN AND APPLES

Honey-Mustard Chicken and Apples image

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 10

8 skin-on, bone-in chicken thighs (2 to 2 1/2 pounds)
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1 large onion, cut into large chunks
2 cooking apples (such as Cortland), cut into chunks
1 cup low-sodium chicken broth
2 to 3 tablespoons honey mustard
1 1/2 teaspoons unsalted butter, softened
1 tablespoon all-purpose flour
1 to 2 tablespoons roughly chopped fresh parsley

Steps:

  • Preheat the oven to 450 degrees F. Season the chicken with salt and pepper.
  • Heat the olive oil in a large ovenproof skillet over medium-high heat. Working in batches if necessary, add the chicken, skin-side down, and cook until golden, about 6 minutes. Flip and cook 2 to 3 more minutes, then transfer to a plate. Pour off all but 2 tablespoons of the drippings.
  • Add the onion and apples to the skillet and season with salt and pepper. Cook until slightly softened, about 4 minutes. Mix the broth with the mustard, then add to the skillet and bring to a boil. Arrange the chicken, skin-side up, in the skillet. Transfer to the oven and roast until the chicken is cooked through, 15 to 20 minutes.
  • Mix the butter and flour to form a paste. Use a slotted spoon to transfer the chicken, apples and onion to plates. Bring the pan juices to a simmer, whisk in about half of the butter-flour mixture and boil to thicken, 2 minutes. Continue to cook, adding more of the butter-flour mixture as needed to make a slightly thick gravy. Season with salt and pepper. Pour over the chicken and sprinkle with parsley.

Yield Serves 4

Number Of Ingredients 8

4 boneless skinless chicken breast halves (about 1 1/2 pounds)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1 tablespoon chopped fresh rosemary
1 tablespoon unsalted butter
1 1/2 teaspoons extra-virgin olive oil
2 unpeeled Honeycrisp or Fuji apples, cored and sliced 1/4 inch thick (about 2 1/4 cups)
2 ounces Stilton cheese, crumbled (about 1/3 cup)

Steps:

  • Preheat the oven to 425°F. Lightly oil a small, rimmed baking sheet with extra-virgin olive oil or coat with nonstick cooking spray. Season the chicken breasts with salt and pepper, and sprinkle with the rosemary.
  • Melt the butter with the oil in a large nonstick skillet over medium-high heat. Cook the chicken for 6 minutes or until browned on both sides, turning once. Transfer to the baking sheet. Add the apple slices to the skillet and cook over medium-high heat for 3 to 4 minutes, or until slightly softened and lightly browned. Spoon the apples around the chicken, placing a couple of slices over each breast.
  • Bake for 6 minutes or until the chicken feels slightly firm when pressed. Scatter the cheese over the chicken and apples. Continue baking another 2 minutes, or until the cheese is melted and the chicken is no longer pink in the center. Serve the chicken with the apples.

Tips:

  • Use a sharp knife to cut the chicken breasts into even-sized pieces. This will help them cook evenly.
  • Season the chicken breasts with salt and pepper before cooking. This will help them develop flavor.
  • Cook the chicken breasts over medium heat until they are cooked through. This will help prevent them from drying out.
  • Add the apples and onion to the skillet with the chicken breasts during the last few minutes of cooking. This will help them soften and caramelize.
  • Serve the chicken breasts with your favorite sides, such as mashed potatoes, rice, or vegetables.
