1/4 pound smoked bacon* (preferably slab), cut crosswise into 1/4-inch pieces
2 medium-large onions, sliced thin
4 medium carrots, cut crosswise into 1/4-inch -thick slices
5 1/2 cups Oktoberfest lager (44 ounces) such as Paulaner
1 cup chicken broth
3 bay leaves
1 teaspoon salt
1/2 teaspoon whole black peppercorns

SAUSAGES WITH BRAISED PUY LENTILS

SAUSAGES WITH BRAISED PUY LENTILS image

Categories     Soup/Stew     Pork     Braise     Quick & Easy     High Fiber     Wheat/Gluten-Free     Dinner

Yield 2 serves

Number Of Ingredients 13

2/3 cup puy lentils
4 Pork and fennel sausages
olive oil
1 glass red wine
2 garlic cloves, finely chopped
1 small onion, finely chopped
small sprig rosemary, finely choppsed
small handful of sage leaves, finely chopped
1 red chilli, seeded and chopped
1 heaped teaspoon tomato paste
1 cup beef stock
2 tbsp chopped flat leaf parsley
salt and pepper

Steps:

  • Cook the lentils in plenty of boiling water until mostly cooked. In a deep pan, gently fry sausages in olive oil until brown and then keep warm in oven. Tip off fat/oil from dish and discard. Boil down red wine (in same pan) until about 3 tablespoons, pour into jug and set aside. Add more oil to pan, add garlic, onion, herbs and chilli and cook over medium heat until soft. Add tomato paste and cook for a minute or two. Add drained lentils, red wine reduction and stock and mix well. Cook over low heat until lentils are cooked through but still retain some bite. Add more stock if the pan is drying out. Season with salt and pepper. Serve with sausages and chopped parsely.

Tips:

  • Choose the right sausages: Look for fresh, high-quality sausages made with good-quality meat. Avoid sausages that are too fatty or filled with fillers.
  • Brown the sausages before braising: Browning the sausages in a pan over medium heat before braising them will help to develop their flavor and give them a nice crust.
  • Use a flavorful braising liquid: The braising liquid is what will give the sausages their flavor, so make sure to use something flavorful. Some good options include beer, wine, broth, tomato sauce, or a combination of these.
  • Add vegetables and herbs to the braising liquid: Vegetables and herbs will help to add flavor and depth to the braising liquid. Some good options include onions, carrots, celery, garlic, thyme, rosemary, and bay leaves.
  • Braise the sausages on low heat for a long period of time: Braising is a low-and-slow cooking method, so make sure to give the sausages enough time to cook through. The general rule is to braise them for at least 1 hour, or until they are cooked through and tender.
  • Serve the sausages with your favorite sides: Braised sausages can be served with a variety of sides, such as mashed potatoes, roasted vegetables, or rice. You can also serve them on a bun with your favorite toppings.

Conclusion:

Braised sausages are a delicious and easy-to-make dish that is perfect for a weeknight meal. They are also a great way to use up leftover sausages. With a little planning, you can have a delicious and satisfying meal on the table in no time.
