Time 30m

Yield Makes 1 litre

Number Of Ingredients 6

140g butter
100ml brandy
300ml milk
2 large egg yolks
175g light soft brown sugar
150ml double cream

Steps:

  • Heat the butter in a small pan until just starting to take on a nutty brown colour - remove from the heat straight away as it will continue to colour. Stir in the brandy, then leave to cool.
  • Heat the milk in a saucepan but don't let it boil. Whisk the egg yolks and sugar in a bowl until pale. Pour over the hot milk, whisking continuously, then return to the saucepan set over a low heat. Cook for 3-4 mins, stirring the whole time with a wooden spoon, until the custard thickens enough to coat the back of your spoon. Leave to cool.
  • Whisk the cream until it forms soft, billowy peaks. Fold in the brandy butter and the custard mixture. Churn in an ice-cream machine until set, then keep in the freezer for up to 2 months.

Yield Makes 2 drinks

Number Of Ingredients 4

1 1/2 cups softened vanilla ice cream
2 ounces (1/4 cup) brandy, or to taste
2 ounces (1/4 cup) crème de cacao, or to taste
Garnish: freshly grated nutmeg

Steps:

  • In a blender, blend ice cream, brandy and crème de cacao until smooth but still thick. Pour mixture into 2 chilled stemmed glasses and garnish with nutmeg.

Tips:

  • Choose a good quality brandy: The brandy you use will make a big difference in the taste of your drink. Look for a brandy that is smooth and has a complex flavor.
  • Use fresh ingredients: Fresh fruit and ice cream will give your drink the best flavor. Avoid using frozen fruit or ice cream that has been sitting in the freezer for a long time.
  • Don't over-blend: If you over-blend your drink, it will become thin and watery. Blend just until the ingredients are combined and smooth.
  • Serve immediately: Brandy and ice cream drinks are best served immediately after they are made. The ice cream will start to melt if you wait too long.
  • Garnish with fresh fruit or mint: A garnish of fresh fruit or mint will add a pop of color and flavor to your drink.

Conclusion:

Brandy and ice cream drinks are a delicious and refreshing way to enjoy brandy. They are perfect for a summer party or a cozy night in. With a few simple ingredients and a little bit of effort, you can make a delicious brandy and ice cream drink that will impress your friends and family.
