½ cup butter, softened
½ cup white sugar
½ cup dried currants
1 ¾ cups milk
2 eggs
1 pinch ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch round pie dish or cake pan.
  • Butter the bread on both sides and cut into triangles. Arrange a single layer of buttered bread in the bottom of the greased pan, slightly overlapping the triangles. Sprinkle with 1/2 of the sugar and all of the currants. Arrange the remaining bread on top, then sprinkle with remaining sugar.
  • Beat milk, eggs, and nutmeg together. Pour over the bread and press down firmly to compress the pudding and help the bread absorb the milk mixture.
  • Bake in the preheated oven until golden brown and set, about 30 minutes.

70g (5 tbsp) softened butter, for greasing
6-8 croissants (crescent rolls), cut into large pieces
50g (1/3 cup) raisins
300ml (1 1/4 cups) double (heavy) cream
300ml (1 1/4 cups) milk
4 eggs
1/2 tsp ground cinnamon
70g (1/3 cup) caster (superfine) sugar

Steps:

  • Generously butter an ovenproof dish that measures about 20 x 30cm (8 x 12 inches).
  • Arrange a single layer of croissant chunks, slightly overlapping, in the bottom of the dish. Scatter over some of the raisins, place another layer of croissant chunks on top and scatter over the remaining raisins. Press down gently with a fish slice or spatula.
  • To make the custard, heat the cream and milk in a saucepan until the mixture comes almost to the boil. Remove from the heat. Meanwhile, whisk together the eggs, ground cinnamon and sugar in a large heatproof bowl set over a saucepan of simmering water until the mixture is thickened and the whisk or beaters leave a trail when lifted. Remove from the heat and beat in the cream mixture until well combined.
  • Pour two-thirds of the custard over the croissants and leave to stand for about 30 minutes or until they have soaked up all the liquid. Preheat the oven to 180°C/350°F/gas mark 4.
  • Pour the remaining custard over the soaked croissants and press down firmly with a fish slice or spatula so that the custard reaches halfway up the croissants. Place the dish in a roasting pan and pour in enough water to come a third of the way up the side of the dish. Bake for 30-35 minutes until the custard is just set and the top is golden brown. Serve immediately.

8 slices French bread, each 1/2 inch thick
2 tablespoons butter or margarine, softened
1/2 teaspoon ground cinnamon
3 eggs
2/3 cup granulated sugar
1 teaspoon vanilla
1/8 teaspoon salt
2 1/2 cups milk, scalded and cooled
Powdered sugar, if desired

Steps:

  • Heat oven to 350°F. Butter 1 1/2-quart casserole. Spread one side of each slice bread with butter. Layer bread slices, buttered sides up, in casserole; sprinkle with cinnamon. Beat eggs slightly in medium bowl; mix in granulated sugar, vanilla and salt. Stir in milk; pour over bread.
  • Place casserole in pan of very hot water (1 inch deep). Cover casserole loosely with aluminum foil. Bake 20 minutes; remove foil. Continue baking 35 to 40 minutes longer or until knife inserted 1 inch from edge of casserole comes out clean. (Cover with foil if top gets too brown.)
  • Remove casserole from hot water. Sprinkle with powdered sugar. Serve warm. Store covered in refrigerator.

Steps:

  • Whisk milk and peanut butter together in a large bowl until fully incorporated. Whisk in 3/4 cup sugar, beaten eggs, vanilla extract, and salt. Add bread cubes and toss to coat. Cover and refrigerate for 20 minutes, stirring once after 10 minutes.
  • Meanwhile, quarter strawberries and toss with remaining 1/4 cup sugar in a medium bowl. Let sit, stirring occasionally, until ready to use.

Just in time for autumn and Halloween - this delicious pudding is a real winner, with the subtle taste of toffee and apples all cooked together in a bread and butter pudding! I found this recipe in a cookery leaflet promoting English apples, and it is now one of our favourite puddings for the cooler months. I have given a variety of breads/yeast cakes to use; although I have made this with all of the choices on offer, my favourite still remains the brioche - I am sure croissants would work very well too.

6 ounces unsalted butter
6 tablespoons golden syrup
6 ounces dark muscovado sugar
4 apples, peeled, cored and cut into small pieces
2 eggs, beaten
7 ounces milk
7 ounces double cream
1 lb sliced white bread, crusts removed or 1 lb panettone, cut into thick slices

Steps:

  • Preheat the oven to 190 C (gas mark 5, 375 F).
  • Melt the butter in a pan with the golden syrup and muscovado sugar. Let it bubble for 5 to 10 minutes, stirring all the time. Add the apple pieces and cook for a further 5 to 10 minutes more, until softened.
  • In a bowl, mix together the beaten eggs, milk and cream. Cut the brioche, bread or panettone slices into strips (like bread "soldiers") and dip each one in the egg, milk and cream mixture.
  • Arrange half of them in a 1.2 litre (2 pint) buttered ovenproof dish, then pour over half the apple mixture.
  • Repeat with the remaining brioche, bread or panettone strips and apple mixture.
  • Bake for 20 to 30 minutes until the top is golden and the pudding is puffed up and bubbling.

1/2 loaf cubed day-old challah bread
4 cups milk, divided
4 eggs
1 cup sugar
1 tablespoon vanilla extract
1 cup peanut butter
1 cup crushed roasted, salted peanuts, divided
3/4 cup grape jelly, melted, for topping

Steps:

  • Preheat oven to 325 degrees F. Grease an 11 by 7-inch baking dish.
  • Put the cubed bread on a large cookie sheet and bake it until lightly toasted, about 10 to 12 minutes. Remove the bread from the oven and set aside.
  • In a large bowl, whisk together 3 cups of the milk and the 4 eggs until well incorporated. Add the toasted bread.
  • In a medium-sized saucepan, over medium heat, heat the remaining 1 cup of milk, sugar, vanilla and peanut butter until the peanut butter melts and the mixture is smooth. Combine the peanut butter mixture with the bread mixture and stir well until evenly distributed. Put the bread pudding into the baking dish and sprinkle with 3/4 cup of the crushed peanuts. Let sit for 1 hour.
  • Put in the oven and bake until dry and toasty, about 20 minutes. Remove the pudding from the oven and let cool. Brush with the grape jelly and garnish with a sprinkle of the remaining peanuts. Cut into squares and arrange on small dessert plates.

1 pound red rhubarb
Sugar
4 tablespoons butter, preferably unsalted
12 slices good-quality white bread, crusts removed
2 cups cream
1 cup milk
4 extra large free-range eggs, beaten lightly
1 teaspoon pure vanilla extract
3/4 cup plus 2 tablespoons sugar
1 tablespoon extra sugar, for sprinkling on top of pudding
DECORATION
Softly whipped cream
YOU WILL NEED
A deep 8-inch square or round baking dish
A water bath or roasting pan

Steps:

  • Cut the rhubarb into 1-inch pieces. Put into a dish and sprinkle with sugar. Let macerate for an hour.
  • Butter the bread. Arrange four slices, buttered-side down, in one layer in the buttered baking dish. Scatter half the rhubarb over the bread, and cover with another layer of bread, buttered-side down. Scatter the remaining rhubarb on top and cover with the remaining bread, buttered-side down.
  • Whisk together the cream, milk, eggs, vanilla, and sugar in a bowl. Pour the mixture through a fine strainer over the bread. Sprinkle the extra spoonful of sugar over the top. Let the mixture stand, covered loosely, for at least 1 hour or refrigerate overnight.

  • Preheat oven to 350°F.
  • Soak sultanas in hot water for 10 minutes, then drain.

  • Arrange in a greased deep casserole dish along with raisins.
  • In a saucepan, bring the milk, cream, vanilla bean and sugar to just below a boil.
  • Remove the vanilla bean.

I foudn this recipe yesterday and made it stright away. I am posting it so that I don't lose the recipe as it can be made last minute. I used the end of the challa, instead of brioche. Use whatever you have handy. I think next time I might pop it under te grill for that crispy topping you don't get in the microwave.

2 slices brioche bread, hallah, croissant, buttered
25 g caster sugar
150 ml milk
2 tablespoons cream or 2 tablespoons creme fraiche
1 teaspoon vanilla extract
1/2 teaspoon mixed spice (I omitted this)
25 g dried fruit

Steps:

  • Cut the bread into fingers and layer them in the bottom of a small dish. (About 600 ml capacity).
  • Add dried fruit.
  • Whisk together the egg, milk, cream, vanilla extract and cream.
  • Pour over the bread and let it sit for about 1 hour. If you don't have an hour it does not matter too much.
  • Micorwave on medium power for 4 - 5 minutes until it begins to set at the edges.

1/4 cup butter, for spreading
3 tablespoons brown sugar, divided (or to taste)
2 cups milk, full fat is nicest
1 -2 cup dried fruit or 1 -2 cup other fresh soft fruit
1 pinch ginger
1 pinch cinnamon
1 pinch nutmeg

Steps:

  • Butter the slices all over, both sides and line the dish.
  • Sprinkle over the dried fruit or other fruits (fig and banana -- ).
  • Sprinkle approximately 2TB brown sugar over that and add a cover of more buttered bread, covering all the fruit.
  • Pierce the bread a few times and then slowly pour over the milk, letting it all soak into the bread before adding more. When the bread is really sopping with milk sprinkle about 1TB more brown sugar over the top and then a little cinnamon, ginger and nutmeg.

1/8 teaspoon fine sea salt

Steps:

  • Position a rack in the middle of the oven and preheat to 325°F. Butter a 9- by 13- by 2-inch rectangular ovenproof dish.
  • Spread the remaining butter on one side of each bread slice. Arrange the bread slices, buttered side up, in one layer on the bottom of the prepared dish. Sprinkle with the raisins and set aside.
  • In a large saucepan, combine the milk, heavy cream, and salt. Using the blade of a small, sharp knife, scrape the seeds from the vanilla beans into the mixture; add the scraped vanilla beans. Place the pan over moderate heat and bring to a boil. Remove from the heat.
  • In a large bowl, whisk together the eggs and sugar until pale yellow, about 1 minute. Whisk about 1 cup of the hot milk mixture slowly into the egg mixture to raise the temperature without cooking the eggs. Gradually whisk in the remaining milk mixture, whisking until fully combined. Pour the custard through a fine-mesh sieve into a large bowl and discard the vanilla beans.
  • Pour the custard over the bread. The bread will float to the top-use a spatula to gently press down on the slices, making sure they are completely covered in custard. Place the dish in a large roasting pan or rimmed baking sheet and add enough warm water to the pan to reach about halfway up the sides of the dish.
  • Bake the pudding for 30 minutes, then use a spatula to gently press down on the bread slices. Continue baking until the pudding is puffed and set but still jiggles in the center, about 30 more minutes. Transfer the pudding in its water bath to a rack to cool slightly.
  • Meanwhile, in a small saucepan over low heat, warm the apricot jam with 1 tablespoon of water, stirring occasionally until liquefied, about 1 minute.
  • Carefully remove the pudding from the water bath, then brush the surface with the warm apricot jam. Dust the top with the confectioners' sugar and serve warm. DO AHEAD: The bread and butter pudding can be prepared ahead, covered, and refrigerated up to two days. Reheat the entire dish in a water bath in a 325°F oven until the center is warm. Individual portions can be reheated in a toaster oven.

1 teaspoon ground cinnamon
1/8 teaspoon nutmeg
1/4 cup sugar

6 slices of white crust- on bread (preferably potato bread)
1/3 cup raisins
2 cups milk
2 eggs

Steps:

  • Spread bread slices out on a cutting board and leave out for a few hours to stale a bit.
  • Preheat oven to 350 degrees. In a small bowl, combine the sugar, cinnamon, nutmeg and salt, set aside.
  • Spread butter evenly over the six slices of bread (one side only-not both!), and cut the slices in to fourths.
  • Spray a round 8 or 9 inch baking dish with non-stick cooking spray. Arrange the cut bread slices around in the pan to make somewhat of a spiral pattern , keeping the buttered side up and the cut edges facing the same direction.
  • Sprinkle the raisins evenly over the top, followed by the cinnamon/sugar mixture.
  • Whisk the eggs and milk together in a bowl and pour over the bread. Allow to sit for 15 minutes so that the bread can absorb the liquid.
  • Bake for about 30 minutes, or until the top is golden brown. Serve warm. If desired, sprinkle some powdered sugar for garnish. In Ireland, they like to pour a bit of cream on top.

Mandy from Oz requested her recipe#243686 be made lighter so I took on the challenge. I not only cut the fat and sugar but added more flavor. Yum! I started with 1 serving of her recipe and worked off of that and made it 2 servings. I think this would be good with bananas tossed in orange juice mixed in it too! There are more ways to make it even lighter which I have offered below. You could also omit the sauce. ***Nutrition facts for Splenda brown sugar blend: 1/2 tsp= 10 calories and 2g sugars. So if you use all of it in this recipe that should bring the calories up to 386 per serving and the sugar to 20.5g per serving.

  • Pudding:.

  • Topping:.
  • Mix together brown sugar Splenda, cinnamon and nutmeg.
  • Sprinkle over the pudding tops.
  • Place pudding ramekins into a small baking dish filled halfway with hot water so that they are each surrounded by the water.
  • Bake in preheated oven for 50 minutes.
  • Butterscotch Sauce:.
  • In a 2-cup glass pyrex, stir together brown sugar Splenda, salt, cream of tartar and cornstarch.
  • Slowly stir in evaporated milk and put 1 tbsp of butter in it.
  • Microwave on high for 3 minutes.
  • Stir in vanilla.
  • Reheat if made ahead.
  • To Serve:.
  • Drizzle hot sauce over puddings.
  • Top with a dollop of Cool Whip Lite, if desired.

6 -8 slices white bread, with the crusts removed
1 1/2 ounces soft butter (approx)
1 clove crushed garlic
1 onion, finely chopped
1/2 teaspoon paprika
3 ounces grated sharp cheddar cheese
1 egg yolk
2 eggs
300 ml milk
salt and pepper
some chopped parsley, for serving

Steps:

  • Use a little of the butter to fry the onion, paprika and the garlic until they are soft.
  • Use the rest of the butter to spread on the bread and grease an ovenproof dish.
  • Cut each slice of bread into triangles and arrange 6 slices, butter side up, in the dish.
  • Sprinkle over half the onion-garlic mix and half the cheese.
  • Arrange the remaining slices on top, this time with the butter side facing down, and top this with the rest of the onion-garlic and the cheese In a jug mix together the yolk, eggs, milk and seasoning.
  • Pour the egg-mixture over the bread.
  • Cover and leave for 30 minutes minimal, maximal 2 hours.
  • Preheat the oven to 350 degrees F.
  • Uncover the pudding; bake for 40 to 45 minutes until brown and the custard has set.
  • Serve with the parsley sprinkled over.

1 packet roqaq (a type of cracker bread)
1 cup mixed nuts
1 tablespoon coconut, grated
1 tablespoon unsalted butter or 1 tablespoon fresh cream

Steps:

  • Dry the roqaq or gullash, 1-2 sheets at a time, for 1-2 minutes in a hot oven, enough to make them dry and crisp.
