This recipe is right off the Hellman's mayonnaise jar. To me, it's so good it rivals my mother in law's potato salad, which I think is the best there is. It's a plain and simple potato salad, but it's delicious! Add pimentos, olives, or green peppers depending on what you like in your potato salad.

Tips:

  • Use a variety of potatoes: Different types of potatoes have different textures and flavors, so using a mix can create a more interesting salad. Good options include Yukon Gold, red potatoes, and fingerling potatoes.
  • Don't overcook the potatoes: Overcooked potatoes will be mushy and bland. Cook them just until they are tender when pierced with a fork.
  • Let the potatoes cool completely before dressing them: This will help to prevent the potatoes from absorbing too much dressing and becoming soggy.
  • Use a light hand with the dressing: A little bit of dressing goes a long way. Start with a small amount and add more to taste.
  • Add some fresh herbs or vegetables to the salad: This will add flavor and color. Good options include parsley, chives, dill, celery, and onion.
  • Chill the salad before serving: This will help to firm up the potatoes and make the salad more refreshing.
