MORNING GLORY MUFFINS

Steps:
- Preheat the oven to 350 degrees F and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups.
- In a large bowl, whisk together the eggs, oil, and vanilla. Add the carrots, apple, pineapple, pecans, coconut, and raisins and stir together. In a medium bowl, sift together the flour, sugar, cinnamon, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir just until combined. Scoop the batter with a standard (2 1/4-inch) ice cream scoop (I use rounded scoops of batter) into the prepared muffin cups. Bake for 30 to 35 minutes, until a toothpick comes out clean. Place the pans on a baking rack to cool and serve the muffins warm or at room temperature.

- Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
- Mix flour, baking powder, and salt together in a bowl.
- Beat eggs, milk, white sugar, and canola oil together in a separate bowl; mix into flour mixture until just combined into a batter.
- Pour batter into prepared muffin cups to about 1/4 full. Top each batter portion with a generous pinch of brown sugar and a sprinkle of cinnamon; top with remaining batter to about 2/3 full.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 15 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

BROWN-EYED SUSANS II
Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets.
- In a medium bowl, cream the butter, margarine and confectioners' sugar until light and fluffy. Stir in the vanilla. Add the flour and mix until just blended. Do not overmix.
- Roll dough into 1 inch balls. Place cookies 2 inches apart into prepared cookie sheets. Make a slight indentation in the center. Bake for 10 to 12 minutes in the preheated oven. Cookies should be lightly browned. Cool slightly and frost the center of each cookie.
- To make the icing, combine the confectioners' sugar, cocoa and vanilla in a small bowl. Stir in the hot water 1 tablespoon at a time until desired consistency is reached. Drizzle the icing from the tip of a knife or spoon onto the center of each cookie. Allow the cookies time to set up before serving.

- Heat over to 400°F Grease cookies sheets.
- In a mixing bowl, cream butter. Add sugar, almond extract, and salt. Blend in flour.
- Shape a tablespoon of dough into a ball. Place on cookie sheet. Flatten with bottom of a glass that has been dipped in flour.
- Bake 10-12 minutes, until cookies look dry and are beginning to brown around the edges. Remove to rack. Cool.
- Prepare Frosting: In a small saucepan, melt butter with chocolate (or microwave). Add remaining ingredients and blend until smooth.
