1/2 medium onion, finely chopped
3 garlic cloves, minced
1/4 red bell pepper, finely chopped

1 cup monterey jack pepper cheese, grated and divided
1 egg
2 tablespoons Worcestershire sauce
2 tablespoons steak seasoning (I recommend Grill Seasoning)
2 tablespoons extra virgin olive oil
1 medium onion, thinly sliced
12 cremini mushrooms, sliced
1 tablespoon extra virgin olive oil
1/4 cup red wine
2 tablespoons Worcestershire sauce
1/2 cup milk
1 tablespoon Dijon mustard
2 tablespoons butter
2 tablespoons chives
salt and pepper

Steps:

  • Combine ground beef, breadcrumbs, chopped onion, garlic, bell pepper, serrano, parsley, 1/2 the pepper jack cheese, egg, Worcestershire and grill seasoning in a large mixing bowl.
  • Mix gently until all ingredients are combined well.
  • Form 4 fat patties.
  • Drizzle olive oil on a platter and coat both sides of the patties with the oil.
  • Place patties in a hot (medium high flame) skillet. Don't move them! Let the patties caramelize on one side before flipping, then let them caramelize on the other side.
  • When patties are done, transfer to a platter. Top each patty with 1/4 of the remaining cheese. Cover with a foil tent and place into a warm oven to melt the cheese. The foil tent helps the patties retain their juiciness.
  • In the same skillet, drizzle in the remaining 1 Tbsp of olive oil.
  • Saute the onions and mushrooms until the mushrooms are a nice, rich brown, then season with salt and pepper.
  • Deglaze the pan with wine, scraping up all the tasty brown bits. Let the alcohol cook off.
  • Stir in Worcestershire, milk and mustard. The mixture will thicken up quickly.
  • Gloss the sauce by dropping the butter into the pan in small chunks and letting it melt. When all the butter is melted, give the pan a final stir.
  • When you plate the patties, spoon the onion mushroom sauce over each patty.
  • Garnish with fresh chives.

1/4 cup apple cider vinegar

Steps:

  • Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
  • In a small mixing bowl combine the mayonnaise, apple cider vinegar, lemon juice, sugar, and black pepper. Mix until well combined and refrigerate until serving.
  • Heat a large fireproof nonstick skillet on the grill. Add the bacon and cook over medium-high heat until the bacon is crispy, about 5 minutes, flipping once. Drain on paper towels. Reserve the rendered bacon fat from the skillet.
  • Combine the pork, smoked paprika, chili powder, cayenne, salt, and pepper in a large bowl. Add 1 1/2 tablespoons of the rendered bacon fat from the skillet. 3 tablespoons crumbled blue cheese (1 ounce)

8 ounces white mushrooms, stems trimmed, wiped clean and chopped (may sub brown mushrooms)
1 cup mixed chopped wild mushroom (optional)
1 cup chopped onion
1 teaspoon minced garlic
1 tablespoon balsamic vinegar
1/2 cup pecan pieces
1 large egg, lightly beaten
1/2 cup fine dry breadcrumb (Italian flavored work great)
1 tablespoon italian seasoning (may sub 1/2 T Greek seasoning)

Steps:

  • Combine yogurt, blue cheese, chives (if using) and dressing in a small bowl and blend with a fork to make a chunky sauce. Refrigerate it while you make the burgers; it will keep for up to 2 days.
  • Place bulgur and 1/4 teaspoon salt in a small bowl. Pour the boiling water over, cover and set aside until the water is absorbed, about 20 minutes. Drain in a sieve, pressing out excess liquid.
  • Meanwhile, spray a large nonstick skillet with cooking spray and turn on stove to medium heat.   • With dampened hands, form the mixture into eight 1/2-inch-thick patties, using about 1/2 cup for each. (I made mine into 13 mini burgers using a slider station).
  • Place burgers on a cookie sheet (coated with cooking spray) and place under a broiler on high. Mine took 8 minutes to crisp ever so slightly and to become heated through. You can also cook them in a frying pan for 4 minutes per side (mine fell apart doing this though, that's why I put the rest of them under the broiler).

Steps:

  • Heat the olive oil in a frying pan and saute the onions, carrots, garlic, cumin, celery seed, and salt over medium heat until the onions are transparent. In a food processor, combine the nuts, and blend until 1/2 are a coarse meal and the other are just cracked. Place in a large mixing bowl and add the Sauteed vegetable mixture. Add the garbanzo beans in the processor and process the same way as the nuts. Add flour and arrowroot. Add the beans and parsley to the mixing bowl. Mix everything together well until the mixture has enough body to form a patty. If the mixture is too dry or crumbly, add a small amount of water to help the mixture bind. Form the mixture into 4 burgers. Lightly oil the frying pan and fry the burgers over medium heat for 3 to 4 minutes on each side until lightly browned.
  • Heat oil in skillet, saute onion, scallion and garlic until soft. Add tehina and stir until lightly roasted. Dissolve miso and seasoning in 3/4 cup water. Stir into tehina. Add vinegar and simmer 5 minutes but do not boil. Add fresh parsley.

1/4 cup milk

3 tablespoons sweet pickle relish

  • Preheat oven to 350°F degrees. In a large bowl, combine bread cubes, milk, and egg, using a fork to break up the bread cubes. Add onions, salt, and pepper, and mix well. Add ground beef, incorporating the egg mixture and onion with a fork or hands. On a parchment-lined baking sheet, place half the beef mixture on the sheet and shape into a 4.5-inch by 9.5 inch rectangle. Top the beef with 10 pickles and 3 cheese slices. Add the remaining beef mixture on top of the pickles and cheese, smoothing with a fork or hands and sealing the sides to prevent the cheese from melting out. 16 ounces black beans, rinsed
1 cup green bell peppers or 1 cup red bell pepper, chopped
3 garlic cloves, minced
2 tablespoons red onions, chopped
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon onion powder
1/4 cup minced cilantro
1 egg
3/4-1 cup panko breadcrumbs (enough to hold together)
salt and pepper
ciabatta rolls or toasted bun
1/4 cup plain Greek yogurt
1 teaspoon sriracha asian garlic sauce
2 teaspoons minced cilantro
avocado, slices
alfalfa sprout
monterey jack cheese or provolone cheese
tomatoes
lettuce

Steps:

  • For the sauce: Combine yogurt, Sriracha and cilantro. Set aside.
  • Add to a food processor the black beans, green peppers, garlic cloves, and red onion. Pulse until pureed. I prefer to leave a few semi-whole beans. Transfer to a medium sized bowl.
  • Add the egg and mix well.
  • Add to the bean mixture: the cumin, chili powder, onion powder, cilantro, salt and pepper. Mix thoroughly. Add the panko and mix to combine.
  • Preheat grill pan or skillet on medium-high heat.
  • Form patties and cook for 3-4 minutes on each side. Transfer to rolls and top with Sriracha sauce and toppings, if desired.

1 1/2 lb medium white shrimp, peeled, deveined and tails off
1/2 c loose cut cilantro leafs
3 clove garlic
1/2 slice green bell pepper
1/2` small onion
1 c panko bread crumbs
2 tsp old bay seasoning
2 tsp fresh dill, chopped
2 Tbsp fresh ginger paste, gourmet garden
1/3 c mayonnaise
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp crushed red pepper flakes
2 Tbsp olive oil
FOR THE BURGERS
6 soft kaiser rolls
6 leafs of butter lettuce
1/2 c red onion, thinly sliced
GINGER MAYO COCKTAIL SAUCE
1/2 c mayonnise
1 Tbsp fresh chopped parsley
1 Tbsp ginger paste
1/2 c spicy cocktail sauce

Steps:

  • 1. In a food processor, add cilantro leafs, garlic, green pepper and onion, pulse lightly to combine. Then add shrimp to food processor and pulse until coarsely chopped.
  • 2. Remove shrimp mixture from food processor and place in a large bowl; add panko bread crumbs, old bay seasonings, dill, ginger, and mayo blend well. Then add salt, pepper and red pepper flakes.
  • 3. Form shrimp burgers - with a large ice cream scoop or large spoon, place mixture in your hands and form 6 - ½" thick Patties and place them on a parchment paper lined baking sheet. Place burgers in the refrigerator and let chilled for about 10 - 15 minutes.
  • 4. While burgers are chilling, in a small bowl add ½ cup of mayo, parsley, ginger paste and cocktail sauce and mix well.
  • 5. In a large nonstick skillet, over medium heat add olive oil and place 3 patties in pan and cook until golden brown on one side, then turn over and cook the other side. Repeat the process for second batch of patties. Cooking process should take about 15 - 20 minutes. After cooking place burgers on a plate and keep warm.
  • 6. Place Kaiser rolls in toaster oven and toast lightly if desire. For each burger, place one butter lettuce leaf on bottom bun, add shrimp burger, thinly sliced red onions and top it off with ginger mayo cocktail sauce then crown burger with top bun. Round out the meal with fries, chips or potato salad. Enjoy

Typically, the buns are oval shaped sourdough - grilled, 2 hamburger patties (I use only one), slice of cheddar along with this sauce - warmed. These burgers were always served with tater tots. 2 teaspoons celery seeds
