I use Recipe #95416 when I'm decorating a cake but we like this version on brownies, cookies or undecorated cakes. I cut the recipe in half for brownies. Goes really well on Recipe #2496. Freezes well also. (If you have leftovers, put it between graham cracker for a delicious snack or dessert. My kids love it that way!)

Steps:

  • For the crust: Preheat the oven to 325 degrees F. Line muffin pans with 36 muffin liners. Combine the graham cracker crumbs, granulated sugar and butter in a bowl. Mix with your hands until well combined. Press 2 tablespoons of the mixture into the cupcake liners and bake for 7 minutes. Remove and let cool.
  • For the chocolate cake: Preheat the oven to 325 degrees F. In the bowl of an electric mixer with the whisk attachment, whisk the flour, cocoa powder, granulated sugar, baking soda, baking powder and salt until well combined. Add the eggs, one at a time, scraping the bowl as needed. Add the buttermilk, vegetable oil, vanilla and coffee and mix for about a minute until well combined. Fill the 36 muffin pans with the pre-baked graham cracker crust three-quarters full with batter and bake until a toothpick inserted comes out clean, about 20 minutes.
  • For the peanut butter cream cheese filling: Whip the cream cheese and butter in an electric mixer with the paddle attachment until fully incorporated. With the mixer on low, gradually add the powdered sugar until combined. Add the vanilla and mix until combined. Finally, add the peanut butter and mix until fully incorporated.
  • For the marshmallow frosting: In small saucepan, combine the granulated sugar, 5 ounces water and the cream of tarter and boil until the sugar dissolves, stirring occasionally.
  • In the bowl of an electric mixer with the whisk attachment, beat the egg whites and vanilla until firm peaks form. With mixer on high, slowly stream the hot sugar mixture into the egg whites and mix for about 3 minutes.
  • To assemble: Use a knife to cut a hole out of the center of the cupcakes. Fill with peanut butter cream cheese filling with a spoon and frost with marshmallow frosting.

  • For filling:
  • Bring cream and sugar to simmer in saucepan, whisking to dissolve sugar. Remove from heat. Add chocolate; let stand 1 minute. Whisk until smooth. Whisk in peanut butter. Chill uncovered overnight.
  • For cake:
  • Preheat oven to 350°F. Butter three 9-inch-diameter cake pans with 1 1/2-inch-high sides. Line bottoms with parchment paper. Sift first 4 ingredients into medium bowl.   • Place butter in a light-colored saucepan over medium heat.   • To prepare the cake: Preheat oven to 350°F Grease and flour two 9" cake pans. In the food processor, coarsely chop the candy bars; set aside.

There are so many ways to tweak this, such as adding coconut or well drained chopped mandarin oranges, but this is our favorite.

1 (18 1/4 ounce) package golden butter recipe cake mix
3 eggs (or as called for by your cake mix)
1/2 cup butter (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 pint heavy whipping cream, chilled
20 ounces crushed pineapple, well drained
2 -3 tablespoons confectioners' sugar

Steps:

  • Let pineapple drain about 2 hours before baking.
  • According to the cake mix, have 1 stick of butter and 3 large eggs at room temperature.
  • Place a medium bowl and the beaters of an electric blender in the freezer.
  • Bake cake in any size pan you wish.
  • When cake is done, and cooled, add whipping cream and powdered sugar (more or less according to your taste) to the bowl that was in the freezer.
  • Use the cold beaters to whip the cream until set. (about 4 minutes?)
  • Blend in pineapple.

1 box white or yellow cake mix
1- 3 oz. box jello gelatin, any flavor, regular or sugar free

Steps:

  • 1. Preheat oven as directed on cake mix box. Follow directions for making a 9X13 cake including all ingredients called for on the box. Bake cake as instructed.
  • 2. About 5 minutes before the cake is done, in a small bowl, mix jello powder and 1 1/4 cup hot water. Stir until dissolved. NOTE: You do not use the amount of water called for to make regular jello.
  • 3. When cake is done, let it cool 5 minutes. Poke the cake with a fork or a kebab pole all over the top of the cake going down to the bottom of the pan. Make sure you get the edges and corners.
  • 4. Using a tablespoon, slowly drip the dissolved hot jello over the cake, taking care to get all of the holes. Cool cale completely and put in refrigerator to continue to cool and set- about 4 hours.
  • 5. I use this frosting on my poke cakes. I sometimes match the flavor but you can mix it up to make it match holiday colors, shower color or birthday party colors. 2 1/4 cups sugar
1 cup oil (not olive oil)
3 large eggs
2 cups flour
1 teaspoon cinnamon
1 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon baking soda
2 teaspoons vanilla
2 cups shredded zucchini, unpeeled
1 small carrot, shredded
3/4 cup rolled oats
1 cup chopped walnuts
1 cup butter, softened
1 1/2 teaspoons almond extract
3 teaspoons vanilla
5 cups confectioners' sugar
1 (8 ounce) package cream cheese, softened

Steps:

  • Set oven to 350 degrees.
  • Grease a 15 x 10-inch jelly roll pan or cookie sheet, and line with parchment paper.
  • In a large bowl, beat the eggs oil, vanilla and sugar until smooth (about 2 minutes).
  • Sift together flour, cinnamon, salt baking powder, baking soda.
  • Add the flour mixture into the oil/egg mixture and blend well to combine (about 2 minutes).
  • Fold in zucchini, carrots, oats and nuts; blend well to combine.
  • Transfer to prepared pan.
  • Bake for about 22-25 minutes.
  • To make frosting: Mix/beat all ingredients together until smooth, adding more confectioners sugar to achieve desired consistancy to spread.
  • Spread on cooled cake.

DOMINO'S SUGAR BUTTER CREAM FROSTING
1 lb pkg. domino confectioners sugar
1/2 c butter
3-4 Tbsp milk
1 tsp vanilla
WILTON PROFESSIONAL BUTTERCREAM ICING
1 c solid white vegetable shortening
1 tsp wilton flavor (vanilla, almond or butter)
2 Tbsp milk or water
1 lb pure cane confectioners sugar (approximately 4 cups)
1 Tbsp wilton meringue powder
1 pinch salt (optional)

Steps:

  • 1. Wilton Buttercream icing: In a large mixing bowl: cream butter and shortening with electric mixer.
  • 2. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed.
  • 3. Scrape sides and bottom of bowl often. When all the sugar has been mixed in, icing will appear dry. Add milk and beat at high speed until light and fluffy.
  • 4. Keep icing covered with a damp cloth until you are ready to decorate.
  • 5. Domino Sugar Butter Cream Frosting: Combine in a large bowl, with mixer at low speed, confectioner's sugar, butter, milk and vanilla.
  • 6. Beat at medium speed 1-2 minutes until creamy. If desired, add more milk until frosting is spreading consistency. Makes enough to fill and frost 2-layer cake, 13x9x2-inch sheet cake or 24 cupcakes.
  • 7. Professional Butter Cream Frosting: Cream shortening, flavoring and water. Add dry ingredients and mix on medium speed until all ingredients have been thoroughly mixed together.
  • 8. Blend an additional minute or so, until creamy. Chocolate Buttercream Variation: Add 3/4 cup cocoa or three 1 oz. unsweetened chocolate squares, melted and additional 1 to 2 tablespoons water to recipe. Mix until well blended.
