1 cup packed light brown sugar
1/2 cup half-and-half
1/4 cup butter, melted
2 eggs, slightly beaten
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1 teaspoon vanilla
1/4 cup Gold Medal™ all-purpose flour
1/4 cup packed light brown sugar
3 tablespoons cold butter
1/2 cup chopped pecans

Steps:

  • Heat oven to 375°F. Spray 2-quart casserole with cooking spray.
  • In large bowl, stir together squash, 1 cup brown sugar, the half-and-half, melted butter, eggs, salt, cinnamon, allspice, cloves and vanilla until well blended. Spoon into casserole.
  • In small bowl, mix flour and 1/4 cup brown sugar. Cut in butter, using pastry blender or fork, until crumbly. Stir in pecans. Sprinkle over squash mixture.
  • Bake uncovered 40 minutes or until edges are lightly browned. Let stand 5 minutes before serving.

1 butternut squash
1 cup white sugar
1 ½ cups milk
1 teaspoon vanilla extract
1 pinch salt
2 tablespoons all-purpose flour
3 eggs
¼ cup margarine, melted
½ (16 ounce) package vanilla wafers, crushed
½ cup margarine, melted
1 cup brown sugar

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Put butternut squash in the microwave and cook on high, until soft, 2 to 3 minutes. Cut in half, scoop out seeds and cube. Bring a large pot of water to a boil. Add squash and cook until tender, about 15 minutes. Drain and mash.
  • In a 9x13 inch casserole dish combine 3 cups mashed butternut squash, white sugar, milk, vanilla extract, salt, flour, eggs and 1/4 cup melted margarine.
  • Bake in preheated oven for 45 minutes, or until set.
  • In a medium bowl, combine crushed vanilla wafers, 1/2 cup melted margarine and brown sugar. Crumble over top of cooked casserole and return to oven to brown.

8 ounces mushrooms
2 shallots
1 1/2 teaspoons butter
1 tablespoon fresh parsley
1/4 teaspoon pepper
1 cup milk
2 tablespoons flour
1 garlic clove
3/4 cup gruyere cheese, grated
1/8 teaspoon nutmeg
2 1/2 lbs butternut squash, peeled, seeded and cut into 1/8-inch slices

Steps:

  • Pulse mushrooms in food processor until finely chopped. Transfer to bowl.
  • Plus shallots in food processor until finely chopped. Add to bowl with the mushrooms.
  • Melt butter in skillet and cook mushroom mixture about 10 minutes -- until mushrooms have released their liquid and most has evaporated and the shallots are starting to brown. Season with salt and pepper.
  • Preheat oven to 350 degrees.
  • Grease 9" deep-dish pie pan or gratin dish.
  • Bring milk, flour, and garlic to a simmer in saucepan over medium heat, whisking constantly.
  • Whisk in 1/2 c cheese and nutmeg. Season with salt and pepper.
  • Spread 1/3 of squash slices on bottom of pan. Top with 1/3 cheese mixture and 1/2 of mushroom mixture.
  • Repeat layers, ending with cheese sauce.
  • Sprinkle with remaining cheese.
  • Bake 45 minutes or until squash is tender and top is browned.
  • Let stand 10 minutes before serving.

8oz fresh mushrooms, quartered
2 shallots, peeled and coarsely chopped
1 1/2 tsp butter
1 tbsp chopped parsely
1/4 tsp pepper
1 cup 1% milk
2 tbsp AP Flour
1 minced clove garlic (1 tsp)
1/4 cup parmesan cheese
1 oz gruyere, shredded
1/8 tsp nutmeg
1 2.5lb butternut squash, peeled, seeded, and cut into 1/8" thin slices

Steps:

  • Pulse mushrooms in a food processor until finely chopped. Transfer to a bowl. Pulse shallots in processor until finely chopped; add to mushrooms
  • Melt butter in a skillet over medium-high heat. Add mushrooms and shallots, season with salt, and saute 10 minutes, stirring occasionally. The mushrooms will have released their liquid, which will then evaporate, and the shallots should be golden brown. Stir in parsley and pepper.
  • Preheat oven to 350* F. Coat a 9-inch deep dish pie or gratin dish with cooking spray.
  • Whisk milk and flour together in a cold saucepan, add garlic, and then heat over medium until the mixture simmers, whisking constantly. Simmer 2 minutes or until thickened enough to coat a spoon. Whisk in the nutmeg, parmesan cheese and half of the gruyere, then remove this sauce from direct heat.
  • Spread one third of the sliced squash in the bottom of the prepared pan. Top with ONE THIRD of the cheese sauce and HALF of the mushroom mixture. Repeat layers, ending with the cheese sauce. Sprinkle top with remaining gruyere.
  • Bake for 45 minutes, or until squash is tender and the cheese browned. Let sit 10 minutes before serving. Enjoy!

1/2 lb turkey breast, cooked, cubed or 1/2 lb diced turkey
2 small butternut squash
2 teaspoons olive oil
1 green bell pepper, seeded and diced
1/2 cup minced onion
1 teaspoon dried sage
fresh ground black pepper, to taste
2 cups reduced-sodium fat-free chicken broth
3/4 cup quick-cooking barley
1/2 cup feta cheese, crumbled

Steps:

  • Preheat oven to 350 degrees.
  • Coat a 4-quart baking dish with cooking spray.
  • In a large pot of rapidly boiling water, boil squash halves 5 minutes or until not quite tender.

1 large butternut squash, peeled and cut into 1/2-inch cubes
2 cups water
1 cup uncooked brown rice
2 tablespoons light olive oil
½ medium red onion, minced
3 cloves garlic, minced, or more to taste
1 (15 ounce) can garbanzo beans, drained
1 head broccoli, cut into florets
½ pound Brussels sprouts, quartered
2 medium carrots, julienned
1 medium zucchini, julienned
1 medium red bell pepper, cut into 1/2-inch dice
1 medium yellow bell pepper, cut into 1/2-inch dice
1 ½ cups coconut milk
3 tablespoons light soy sauce
2 tablespoons chopped fresh basil

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Place butternut squash in a 9x13-inch baking dish with about 1/2 cup water. Cover with foil.
  • Bake squash in the preheated oven until soft, about 1 hour.
  • While the squash is baking, bring 2 cups water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
