Time 40m

Number Of Ingredients 7

2 c sugar
1 c karo syrup
1/2 c water
2 c raw spanish peanuts
2 Tbsp butter
1 1/2 tsp vanilla extract
2 tsp baking soda

Steps:

  • 1. Prepare 1/2 sheet cake pan by buttering it thoroughly. In a small dish stir together the baking soda, vanilla, and butter. Set aside for later use.
  • 2. Combine sugar, syrup, and water into an iron skillet. Heat mixture over medium high heat while stirring, until the sugar is dissolved and the mixture starts to boil. Continue cooking while stirring occasionally, until the candy thermometer reaches 295 F (approximately 30 minutes). The time will vary depending on humidity, altitude, etc. This is where patience comes into the mix! *
  • 3. Immediately add the peanuts and continue stirring. You have to be quick at this point so the peanuts do not burn! When the thermometer reaches 305 F pour the baking soda mixture into the skillet and stir once or twice. Immediately pour the mixture onto the baking sheet. When the mixture is completely cool, slightly twist the pan to loosen the brittle. Then snap into bite size pieces and enjoy!

Tips and Conclusion

Tips:

  • Use fresh, unsalted peanuts for the best flavor.
  • Toast the peanuts lightly to bring out their flavor.
  • Use a candy thermometer to accurately measure the temperature of the sugar mixture.
  • Stir the sugar mixture constantly to prevent it from burning.
  • When the sugar mixture reaches the hard-crack stage, remove it from the heat and immediately stir in the peanuts and butter.
  • Pour the brittle mixture onto a greased baking sheet and let it cool completely.
  • Break the brittle into pieces and enjoy!
