1 cup (8floz/240ml) heavy whipping cream
4 large egg yolks
¾ cup (6oz/170g) granulated sugar
3 tablespoons instant coffee granules
1 tablespoon vanilla extract

Steps:

  • Place a large mixing bowl with a sieve over it near the stove.
  • Combine the milk and cream in a medium saucepan over medium heat until simmering.
  • Whisk the eggs and the sugar together in a medium mixing bowl.
  • When the milk is simmering, pour one ladleful at a time into the eggs, whisking constantly.
  • Return the milk mixture to the pot, reduce the heat to low, and cook, stirring constantly, until the mixture has thickened enough to coat the back of a spoon.

1/2 cup coffee beans, finely ground
2/3 cup sugar
5 egg yolks
1 cup heavy cream
whipped cream (to garnish) (optional)

Steps:

  • Combine milk and ground coffee in a medium saucepan and bring to a low simmer.
  • Cook for 20 minutes.
  • After 20 minutes, remove the milk from the heat and let stand for 30 minutes (you can also refrigerate it overnight).
  • Strain the milk through a fine-meshed strainer.
  • Heat until bubbling, then cover to keep hot and remove from heat.
  • Blend sugar and egg yolks in a blender or food processor until thick and smooth.

Steps:

  • In a double boiler over simmering water, combine 2 cups of cream (saving one cup for later) ,coffee beans and espresso.
  • Cook, stirring occasionally, until bubbles form around the edge and the cream tastes strongly of coffee, at least 30 minutes.
  • In a large bowl, whisk the egg yolks just until blended.
  • In a thin stream, gradually whisk the hot cream mixture into the egg mixture.
  • Place bowl over a pan of barely simmering water and cook, whisking constantly, until the mixture thickens enough to coat the back of a spoon.

2/3 cup granulated sugar
1/2 teaspoon sea salt
3 tablespoons cornstarch
2 cups whole milk
1 cup heavy cream
1/2 cup light corn syrup
1/4 cup pure maple syrup
1 strip lemon zest, plus the juice of 1 lemon
1 cup walnuts, toasted and roughly chopped
1/2 teaspoon sea salt
Sprinkles, mini chocolate chips, hot fudge, caramel sauce

Steps:

  • For the gelato: The night before, freeze the ice cream maker bowl, if needed.
  • Prepare a large bowl with ice and a little water.
  • Whisk together the sugar, salt and cornstarch in a medium saucepan. Put over medium heat and allow to toast until fragrant, 3 minutes, stirring constantly.
  • Slowly whisk in the milk and heavy cream. Whisking constantly, cook until the mixture begins to bubble and thicken, 5 to 6 minutes. Remove from the heat, pour into a medium heatproof bowl and place over the ice bath. Whisk constantly to help cool the mixture, 3 to 5 minutes.
  • Once cool, prepare an ice cream maker for freezing according to the manufacturer's instructions. Turn on the machine and slowly add the cooled gelato mixture. Allow to churn for 15 minutes until it thickens.
  • Meanwhile, make the wet walnut topping: Combine the corn syrup, maple syrup and lemon zest in a medium saucepan over medium heat. Bring to a boil and cook for 5 minutes. Remove from the heat and stir in the lemon juice, chopped walnuts and salt. Set aside.
  • When the gelato is thick and creamy, turn off the ice cream machine. Scoop the gelato into serving dishes, top with wet walnuts and any other toppings.

In another small bowl stir 1/2 cup of the remaining milk into the cornstarch, stirring until the cornstarch is dissolved. In a large heavy saucepan combine the remaining 4 cups milk and the sugar and bring the mixture just to a boil, stirring until the sugar is dissolved. Stir the cornstarch mixture, whisk it into the milk mixture, and simmer the mixture, whisking, for 2 minutes. Whisk in the espresso mixture. Let the mixture cool to room temperature, chill it, covered, until it is cold, and freeze it in an ice-cream freezer according to the manufacturer's instructions.
