Diane wanted the taste of carmel apples so she added the glaze to a recipe that she had made before. This is a great tasting, moist cake. Serve with a dollop of whipped cream or a scoop of your favorite vanilla ice cream. The recipe comes from Diane Nemitz & Hometown recipes. Note: Nut lovers can add 1 cup of chopped walnuts or pecans to the cake batter.

1/4 cup cinnamon-sugar mixture (for dusting cake pan)
4 apples, chopped small
3 eggs
1 cup canola oil
2 cups flour
2 cups sugar
1/2 teaspoon baking soda
1 teaspoon cinnamon
2 tablespoons butter
1/2 cup firmly packed light brown sugar
2 tablespoons milk

Steps:

  • Preheat oven to 350 degrees; grease a bundt pan or tube pan and coat with cinnamon-sugar mixture.
  • Mix apples, eggs and oil with an electric mixer.
  • Add the flour, sugar, baking soda and cinnamon; mix well.
  • Pour into pan and bake about 1 hour or until a toothpick inserted in center comes out clean.
  • Allow cake to cool in pan for at least 10 minutes; invert onto a cake plate.

0.33 cup all purpose flour
0.33 cup granulated sugar
1 tablespoon apple cider vinegar
1 teaspoon cinnamon
0.5 teaspoon salt
0.5 teaspoon ground nutmeg
0.5 teaspoon ground ginger
0.5 teaspoon allspice
2 batches Basic Flaky Pie Crust , chilled
1 tablespoon unsalted butter, cut into 3 pieces
1 egg, beaten
1 tablespoon turbinado sugar (optional)

Steps:

  • Heat oven to 425°F. In a large bowl, combine the apples, flour, sugar, vinegar, cinnamon, salt, nutmeg, ginger, and allspice and toss gently until combined.
  • Roll one batch of pie dough into an 11-12-inch round. Gently fit the dough into a 9-inch pie plate and trim the edges, leaving a 1-inch overhang on all sides. Fill with the apple mixture, mounding it slightly in the center. Dot with butter. Roll out the second batch of dough and place it over the pie. Trim the edges, then crimp with your fingers or a fork.
  • Use a sharp knife to cut small vents in the top crust. Brush the entire surface with beaten egg, then sprinkle with turbinado sugar if using. Place pie on a baking sheet and transfer to oven. Bake for 15 minutes, until crust is just beginning to brown, then lower temperature to 375°F and bake until filling is bubbling and crust is deep golden brown, 45-50 minutes more.

1 cup white sugar
1 1/2 cups vegetable oil
3 eggs
3 cups flour
1 teaspoon baking soda
2 teaspoons cinnamon

5 fresh apples, peeled and diced in 1/2-inch pieces
1 1/4 cups coarsley chopped pecans
2 1/4 teaspoons vanilla
4 tablespoons unsalted butter
1/4 cup brown sugar
1/4 cup white sugar
1/2 cup heavy cream
1 pinch salt

Steps:

  • Preheat oven to 325.
  • Put sugars and vegetable oil in a mixing bowl, beat til very well blended.
  • Add eggs one at a time, mixing well after each egg.
  • Sift together flour, baking soda, cinnamon, nutmeg and salt, and gradually stir into sugar and eggs, mixing til just blended.
  • Stir in apples, pecans, and vanilla.
  • Pour into buttered and floured 9x13" baking pan, and bake in oven until an inserted toothpick comes out clean (about 1h 15 min.), begin checking after about 50 minutes.
  • Remove from oven and allow to cool completely.
  • While cake is cooling, make glaze, by melting butter in saucepan, add both sugars and salt.
  • Stir til blended and cook over medium heat for 3 minutes.
  • Stir in cream, cook 2 minutes, stirring constantly.
  • Use a skewer or toothpick and poke holes all over top of cake, then pour warm glaze all over surface.
  • Serve warm or at room temperature.

Steps:
