1/4 cup all-purpose flour
1/3 cup dark brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon scant kosher salt
1/4 cup unsalted butter ((half a stick), softened)
1 large egg
3 tablespoons Greek yogurt
3 tablespoons milk
1 1/2 teaspoons vanilla bean paste ((extract can be substituted))
3 tablespoons water
1 tablespoon plain gelatin powder
4 egg yolks
1/4 cup granulated sugar
1 cup pear nectar
3 1/2 ounces pear puree
1/4 cup salted caramel sauce
homemade ladyfingers
about 6 Forelle pears, (dipped in caramel)
satin or grosgrain ribbon (for garnish)

Steps:

  • Preheat the oven to 325 degrees F, and mist an 8-inch diameter x 3-inch deep round cake pan with non-stick spray.
  • Cut a circle from parchment paper, and place in the bottom of the pan.
  • Place the flours, sugar, baking powder, baking soda, and salt in a medium bowl and whisk to combine.
  • Add the butter and mix on medium-low speed, until the mixture resembles damp sand.
  • Stir in the egg, until fully incorporated.
  • Add the yogurt, milk, and vanilla, and beat on medium-high speed for about 1 minute, to aerate the batter and strengthen the cake's structure.
  • Transfer to the prepared pan and bake for 20 minutes, or until the cake springs back when gently pressed and toothpick inserted in the center comes out clean or with a few moist crumbs.
  • Cool for twenty minutes, then unmold and place on a wire rack to cool completely.
  • Place the water in a small bowl, and sprinkle the gelatin in an even layer on top.
  • Whisk the yolks and sugar together in a medium bowl.
  • In a small pot over medium heat, bring the pear nectar to a simmer.
  • Add the hot pear juice to the yolks, a little at a time, while whisking.
  • When all of the liquid has been incorporated, pour the mixture back into the pot and place over medium heat, stirring, until thick enough to coat the back of a spoon.
  • Whisk in the gelatin mixture, and cool to room temperature.
  • Whip the cream until it holds stiff peaks.
  • Fold the whipped cream, pear puree, and salted caramel into the egg mixture.
  • Line a clean 8-inch diameter x 3-inch deep round cake pan with plastic wrap, and place the cake round in.
  • Pour the pear mousse over.
  • Chill until firm.
  • Unmold the cake/mousse from the pan and place on a serving platter.
  • Wrap a sheet of ladyfingers around the dessert, securing with ribbon.
  • Top with caramel dipped pears.

PEAR TARTS WITH CARAMEL SAUCE

Pear Tarts with Caramel Sauce image

Provided by Food Network

Categories     dessert

Yield 4 servings

Number Of Ingredients 14

1/4 cup unsalted butter, softened
1/3 cup super fine sugar
2 large egg yolks
1/4 teaspoon Amaretto or almond extract
1 cup ground almonds (see note)
1 tablespoon all-purpose flour
1/2 cup brown sugar, packed
4 tablespoons unsalted butter
2 tablespoons heavy cream
1 pound puff pastry
2 large ripe pears, peeled, cored, and thinly sliced
1 egg yolk
4 sprigs mint
Confectioners sugar, for serving

Steps:

  • To make the almond cream: In the bowl of an electric mixer or with a wooden spoon, beat the butter and sugar together until light and fluffy. Add the egg yolks, beat in well, and add the Amaretto. Stir in the ground almonds and flour until evenly mixed. The mixture should be the consistency of a thick paste.
  • To make the caramel sauce: In a small sauce pan, combine the brown sugar, butter and cream. Bring the mixture to a boil and boil vigorously for 2 minutes, remove from the heat. Cover and keep warm at the back of the stove.
  • To make the tarts: Preheat the oven to 400 degrees. On a lightly floured surface, roll out the pastry to a 1/8 inch thickness and, using a plate or cardboard circle as a template, use a very sharp knife to cut four 7 inch circles. Spread a circle of almond cream in the center of each, leaving a 1inch border. Fan the sliced pears out from the center of each tart, completely covering the almond cream but still leaving the border. Beat the egg yolk lightly with a fork and brush the border of the pastry with it (try not to let any yolk dribble down onto the cut edges of the pastry, otherwise it will not rise as high). Bake the tarts for about 20 minutes, until the edges are golden and the pastry is baked through. Remove from the oven and allow to cool for 5 minutes Place a sprig of mint in the center of each tart and sprinkle it with a little confectioners sugar. Serve warm, drizzled with the warm caramel sauce.

Yield Serves 6

Number Of Ingredients 11

For charlottes
6 firm-ripe Bosc pears (about 2 3/4 pounds)
1/2 vanilla bean
2 tablespoons sugar
1 stick (1/4 cup) unsalted butter, softened
20 slices firm white sandwich bread (from about two 1-pound loaves)
For sauce
1 cup sugar
3 tablespoons heavy cream
3 tablespoons unsalted butter
3 tablespoons poire William (French pear brandy)

Steps:

  • Make charlottes:
  • Peel and core pears and cut into 1/4-inch dice. With a knife halve vanilla bean lengthwise and scrape seeds into a small bowl. In a dry 5-quart heavy kettle cook sugar over moderately low heat, stirring slowly with a fork (to help sugar melt evenly), until melted and pale golden. Cook caramel, without stirring, gently swirling kettle, until deep golden. Remove kettle from heat and carefully add pears and vanilla bean pod and seeds (mixture will vigorously steam and caramel will harden). Cook mixture over moderate heat, stirring occasionally, until caramel is dissolved and pears are tender but still hold their shape, about 15 minutes. Drain pear mixture in a sieve set over a bowl and reserve any pear juices for sauce. Discard vanilla bean pod.
  • Preheat oven to 375°F.
  • Butter bread slices on 1 side. Using 12 slices of bread, cut 6 bread rounds to fit in bottoms of six 2/3-cup charlotte molds or ramekins and cut 6 rounds the same size as tops of molds or ramekins. Discard crusts from remaining 8 bread slices and cut slices into 1 1/4-inch-wide strips. Put bottom rounds, buttered sides down, in molds or ramekins and arrange strips vertically, buttered sides against insides of molds or ramekins, slightly overlapping and pressing them gently to adhere. Trim any overhang flush with rims. Divide pear mixture among molds or ramekins and top with remaining rounds, buttered sides up, pressing gently. Charlottes may be made up to this point 3 hours ahead and chilled, covered.
  • Bake charlottes on a baking sheet in middle of oven until bread is golden, about 25 minutes.
  • Make sauce:
  • In a dry 5-quart heavy kettle cook sugar over moderately low heat, stirring slowly with a fork (to help sugar melt evenly), until melted and pale golden. Cook caramel, without stirring, gently swirling kettle, until deep golden. Remove kettle from heat and carefully add cream, butter, and any reserved pear juices (mixture will vigorously steam and caramel will harden). Simmer mixture, stirring, until caramel is dissolved and stir in poire William. Invert charlottes onto 6 plates and spoon sauce over them.

CHARLOTTE'S CARAMELS

Categories     dessert

Time 2h17m

Yield About 70 caramels

Number Of Ingredients 11

1 tablespoon butter or vegetable oil cooking spray
1 cup heavy cream
1 cup evaporated milk
1/2 cup sweetened condensed milk
2 cups light corn syrup
2 cups sugar
1/2 cup water
1/2 teaspoon salt
1 stick (4 ounces) unsalted butter, cut into 6 pieces
2 teaspoons vanilla extract
Optional: 1/2 to 1 cup nuts (walnuts, peanuts, almonds), apples

Steps:

  • Spray bottom and sides of a 9 by 11-inch baking pan with vegetable oil or rub with 1 tablespoon butter. In a small heavy saucepan, combine cream, evaporated milk, and sweetened condensed milk. Set aside to warm later.
  • In a large, heavy saucepan, combine corn syrup, sugar, water, and salt. Over high heat, cook until sugar is dissolved, about 6 to 8 minutes, brushing down sides of pan with a pastry brush dipped in water to remove any sugar crystals. Stop stirring, insert candy thermometer, reduce heat to medium and let come to a boil. Cook, without stirring, until temperature reaches 250 degrees F (hard-ball stage), about 45 to 60 minutes.
  • Meanwhile, place cream and milk mixture over low heat and stir until warm. Do not boil.
  • When sugar reaches 250 degrees F, stir in the warm cream and the pieces of butter. Stirring constantly, cook over medium heat until thermometer reaches 244 degrees (firm ball stage), 45 to 60 minutes. Stir in vanilla. Immediately pour into prepared pan without scraping pot. Let stand, uncovered, at room temperature for 12 to 24 hours without moving. This is the most difficult part, as you will want to eat it!
  • To cut into candies, coat a cutting board or marble slab generously with vegetable oil spray. Unmold caramel by turning upside down onto oiled surface. Cut into 1-inch by 1 1/2-inch pieces with a very sharp, heavy knife. Wrap with precut waxed paper squares, twisting ends to seal. If you don't wrap them, the caramel pieces will stick together.

This is the first recipe I turn to after my mother shares juicy pears from her orchard. The down-home flavor of the not-too-sweet dessert is a welcomed alternative to apple crisp. Its crumbly topping and hint to caramel keep friends asking for more. -Karen Ann Bland Gove, Kansas

ROASTED PEARS WITH CARAMEL SAUCE

CARAMELIZED PEARS WITH BLACK PEPPER-CARAMEL SAUCE

Caramelized Pears With Black Pepper-Caramel Sauce image

From America's Test Kitchen. It is amazing how simple this recipe is and the extraordinary results it yields. Impressive.

Provided by DeSouter

Categories     Dessert

Time 30m

Yield 6 serving(s)

Number Of Ingredients 7

1/3 cup water
2/3 cup sugar
3 pears, halved (ripe, medium firm)
2/3 cup heavy cream
1 dash table salt
1/4 teaspoon black peppercorns, whole roughly crushed
3 ounces blue cheese, strong cut into 6 attractive wedges (such as Stilton)

Steps:

  • Remove seeds from pear halves with a large melon baller, and trim off 1/4 inch from the bottom of each pear half so it will stand upright on a plate. Place the water in a 12-inch nonstick skillet and pour the sugar into the center of the pan, taking care not to let the crystals adhere to the sides of the pan. bring to a boil over high heat, stirring occasionally, until the sugar is fully dissolved and the mixture is bubbling wildly. Add the pears to the skillet, cut-side down, cover, reduce the heat to medium-high, and cook until the pears are nearly tender (a paring knife inserted into the center of the pears feels slight resistance).
  • Uncover, reduce the heat to medium, and cook until the sauce is golden brown and the cut sides of the pears are partly caramilzed, 3 to 5 minutes. Pour the heavy cream around the pears and cook, shaking the pan back and forth, until the sauce is a smooth, deep caramel color and the cut sides of the pears are beautifully golden 3 to 5 minutes.
  • Remove the pan from the heat. Using tongs, carefully remove the pears from the pan and place cut-side up on a wire rack set over a trimmed baking sheet. Cool slightly. Season the sauce left in the pan with salt to taste and the crushed black pepper, then pour it into a liquid measuring cup.
  • Carefully (the pears will still be hot) stand each pear half upright on an individual plate and arrange a wedge of the blue sheese beside it. Drizzle the plate and some of the pear with the caramel sauce. Serve immediately. (Alternatively, the pears can be stood upright on a large serving platter, and the warm caramel sauce and the blue cheese can be passed separately.).
  • TECHNIQUE: Coring a Pear 1. Cut the fruit in half from stem to blossom end. Use a melon baller to cut around the central core with a circular motion. 2. Draw the melon baller from the central core to the top of the pear, removing the interior portion of the stem as you go.

3-INGREDIENT CARAMEL-PEAR GALETTE

3-Ingredient Caramel-Pear Galette image

Use a wide spatula to peek underneath your galette to make sure the bottom is golden brown all the way across.

Provided by Dawn Perry

Categories     3-Ingredient Recipes     Dessert     Pie     Pear     Butterscotch/Caramel     Fall     Bake

Yield Serves 8

Number Of Ingredients 4

1 sheet prepared boxed pie crust (not in a tin), thawed if frozen
3 firm-ripe pears, preferably Anjou or Bartlett (about 1 1/2 pounds), thinly sliced crosswise, seeds cut out with a small round cutter or paring knife
Pinch of kosher salt
1/2 cup plus 1 tablespoon caramel sauce, divided

Steps:

  • Preheat oven to 375°F. Unroll pie crust onto a piece of parchment, then roll out to a 13"-diameter circle. Transfer dough on parchment to a rimmed baking sheet.
  • Toss pears, salt, and 1/2 cup caramel sauce in a medium bowl until pears are coated. Arrange pears over crust, leaving a 1 1/2" border, piling them up as you go. Pour any caramel sauce left in bowl over pears.
  • Fold crust up and over edges, overlapping as needed. Bake galette until crust is golden brown and filling is bubbling, 55-60 minutes. Whisk remaining 1 Tbsp. caramel and 1 Tbsp. hot water in a small bowl and brush over pears with a pastry brush. Let cool at least 15 minutes before cutting.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and equipment ready. This will help you stay organized and prevent any scrambling.
  • Use ripe pears: Ripe pears will be sweeter and have a more delicate flavor than unripe pears. If your pears are not ripe, you can ripen them by placing them in a paper bag with a banana or apple.
  • Don't overcook the pears: The pears should be cooked until they are tender but still hold their shape. If you overcook them, they will become mushy.
  • Use a good quality caramel sauce: A good quality caramel sauce will make all the difference in the taste of your dessert. You can either make your own caramel sauce or use a store-bought brand.
  • Chill the charlottes before serving: This will help them to set and make them easier to slice.

Conclusion:

Caramel pear charlottes are a delicious and elegant dessert that is perfect for any occasion. They are easy to make and can be prepared ahead of time. With a few simple tips, you can make sure that your caramel pear charlottes turn out perfect every time.
