1 tbsp olive oil
3 leeks , thinly sliced
375g pack ready-rolled puff pastry
150g pack soft cheese with garlic and herbs
4 rashers streaky bacon , snipped
100g grated emmental

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a frying pan, then gently fry the leeks until soft, about 5 mins. Cool. Unroll the pastry onto a baking sheet. Spread the soft cheese over the pastry to within 3cm of the edges. Scatter over the leeks, bacon and grated emmental.
  • Flip the edges of the pastry over the filling. Bake for 20 mins until golden.

1 egg, beaten, for egg wash
1 teaspoon paprika, or cayenne pepper, both optional
⅔ cup cheddar cheese
10 rashers streaky bacons
brown sugar
fresh rosemary, minced

Steps:

  • Roll out the pastry and brush with the beaten egg.
  • Sprinkle on the paprika and cheese evenly, then sprinkle flour on a rolling pin and flatten down.
  • Cut into ½ inch (1 ¼ cm) wide strips, then fold in half and pinch the ends together. Gently twist pastry.
  • Wrap bacon around the twists.
  • Sprinkle on brown sugar and minced rosemary.

1/2 lb extra-sharp white Cheddar, coarsely grated (2 cups)
1/2 lb cold sliced lean bacon, finely chopped
1 small onion, finely chopped (1/3 cup)
1 1/2 tablespoons drained bottled horseradish
1/2 teaspoon salt
1/4 teaspoon black pepper
14 very thin slices firm white sandwich bread

Steps:

  • Put oven rack in middle position and preheat oven to 375°F.
  • Stir together cheese, bacon, onion, horseradish, salt, and pepper in a bowl with a rubber spatula until blended well.
  • Spread about 1 1/2 tablespoons mixture evenly to edges of each slice of bread with a small offset spatula or butter knife. Arrange slices in 1 layer on a large baking sheet and freeze, covered with wax paper, until firm, about 15 minutes.
  • Trim crusts off bread and reserve for another use (see cooks' note, below), then cut each slice into 4 squares. Bake toasts on baking sheet until beginning to brown on edges, about 20 minutes.

500g pack bread mix
2 tbsp olive oil
200g smoked bacon lardon
2 tbsp butter
3 large fat leeks , thinly sliced
little flour , for dusting
200g mature cheddar , diced
2 eggs , beaten separately
10 sage leaves, thinly shredded
2 tbsp grated parmesan

Steps:

  • Make up the bread mix following pack instructions, using the 2 tbsp oil and the recommended amount of water. Leave in an oiled bowl, covered with oiled cling film, somewhere warm-ish to rise for 1 hr.
  • Meanwhile, put the lardons in a big, cold frying pan. Heat gently at first so the fat runs from the lardons before they crisp up - about 10 mins. Remove with a slotted spoon. Add the butter and leeks to the pan and cook to soften. Cool.
  • Roll out the dough on a lightly floured surface to a rectangle about 20 x 70cm. Mix the lardons, leeks, cheddar, one of the eggs, the sage and some seasoning. Spoon the filling down one long edge of the rectangle, then brush the edge with some remaining egg. Fold the other half of the dough over the filling and pinch together the edges, but not the ends, to seal into a long sausage. Carefully shape into a ring on a floured baking tray, around a floured empty jar or tin. Pinch together the open ends to finish the ring. Brush all over with egg, scatter with Parmesan and cover with a clean tea towel. Leave to rise for 15-20 mins.
  • Heat oven to 200C/180C fan/gas 6. Bake for 30-40 mins until golden and the base sounds hollow when tapped. Eat in wedges.

13 ounces pasta, any shape, I used large macaroni
6 slices bacon, chopped
1 leek, chopped
6 mushrooms, sliced
7 ounces cheese, grated
2 ounces all-purpose flour
1 1/2 ounces butter
1 garlic clove, minced
3 1/4 cups milk
1 1/2 tablespoons whole grain mustard
5 -6 tomatoes, sliced
2 teaspoons dried herbs

Steps:

  • Cook the pasta in boiling water until al-dente and drain.
  • Meanwhile saute the leeks, bacon and mushrooms in a pan until soft and cooked. Put to one side. Preheat the oven to 400°F.
  • Melt the butter in a pan and add the garlic clove taking care not to let it.
  • start to burn. Add the flour bit by bit to create a roux (paste).
  • Bit by bit add the milk stirring all the time (you might want to change to a whisk) until you have a smooth white sauce. Add 3/4 of the grated cheese and the mustard and stir until melted.
  • Stir the leek mixture and the cooked pasta into the cheese sauce and season with salt and pepper to taste.
  • Pour into a baking dish, top with the remaining cheese and sliced tomatoes and spinkle with herbs.
  • Bake in the oven for 20-30 mintues until hot and bubbling.

1 large leek

  • Bring water to a boil in an 8-quart stockpot.
