1 cup red wine, or cherry juice
1/2 cup sugar
1 (16-ounce) package frozen cherries, thawed
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
1 quart vanilla ice cream
1 cup frozen whipped dessert topping, thawed
4 tablespoons sliced almonds, toasted
6 chocolate covered cherries

Steps:

  • In a small saucepan, combine wine or cherry juice and sugar; bring to a boil, stirring until sugar dissolves. Add cherries and return to a boil. Remove from heat and transfer cherries to a bowl, leaving liquid in pan. Let stand 5 minutes. Strain any juice that has accumulated from cherries back into the pan. Bring liquid back to a boil and boil over high heat until volume is reduced by half, about 10 minutes. Remove from heat and stir in vanilla and almond extracts. Let cool until lukewarm. 200g toasted almond , chopped
2-3 tbsp dark rum
10 amaretti biscuits
10 canned cherries (or fresh when in season)

1 1/2 pounds pitted cherries (fresh or thawed frozen, ideally sour cherries)
