1 cup flour
3 tablespoons light brown sugar
2 tablespoons granulated sugar
1 teaspoon baking powder
1 pinch salt
6 tablespoons butter, melted
1 3/4 cups flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1 cup granulated sugar
2 large eggs
1/2 cup canola oil
3/4 cup whole milk
1 teaspoon vanilla
1 1/2 cups pitted sweet cherries

Steps:

  • 1. Preheat oven to 375. Line muffin tins with liners or spray with cooking spray.
  • 2. Make the crumb topping: In medium bowl, combine all dry ingredients. Stir in butter then pinch mixture until it forms pea size chunks.
  • 3. Make the muffins: In a small bowl whisk the flour, baking powder and salt. In a large bowl, combine the sugar, eggs and oil and beat with a hand mixer until well combined. Beat in the milk and vanilla. Add the flour mix and beat on low speed until the batter is smooth. Stir in the cherries.
  • 4. Spoon the batter into muffin tins filling about 3/4 full. Sprinkle crumb topping on each muffin and bake for about 30 minutes until a toothpick inserted in center comes out with a few moist crumbs attached.
  • 5. Let cool for 10 minutes before removing from pan.

ADDITIONAL INGREDIENTS:
1 cup buttermilk
1 large egg, room temperature
1/2 cup butter, melted
CARDAMOM BUTTER:
1/2 cup butter, softened
1/4 cup confectioners' sugar
1 teaspoon ground cardamom

Steps:

  • In a small bowl, combine the flour, sugar and baking soda. In a 1-qt. glass container, layer the flour mixture, cardamom, cloves, cherries and walnuts, packing well between each layer. Cover and store in a cool, dry place for up to 6 months. Yield: 1 batch (about 4 cups total)., To prepare muffins: Place mix in a large bowl. Combine the buttermilk, egg and butter; stir into mix just until moistened. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 20-25 minutes or until a toothpick comes out clean. 1/4 cup butter, room temperature, plus more for greasing tin
1/2 cup brown sugar
1/2 cup granulated sugar
2 eggs yolks, well beaten
1 cup all-purpose flour
1/4 teaspoon baking powder
One 10-ounce jar maraschino cherries, drained, juices reserved
2 eggs whites, stiffly beaten
1/2 cup chopped pecans
Powdered sugar, for dusting

Steps:

  • Preheat the oven to 400 degrees F.
  • Grease the cups of 2 mini-muffin tins and set aside.
  • Cream the butter and brown and granulated sugars. Add the beaten egg yolks, flour, baking powder and 3 tablespoons of the cherry juice, blending well. Fold in the egg whites. Sprinkle 1/4 teaspoon of chopped pecans in the bottom of each muffin cup. Spoon in 2 teaspoons of batter, then place half a cherry in the center of the batter. Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with paper liners. Whisk the flour, sugar, baking powder, cinnamon, cardamom and salt in a medium bowl. Whisk the eggs, milk, 1 1/2 sticks melted butter, the almond paste and vanilla in a large bowl (it?s OK if the almond paste is still a little chunky). Add the flour mixture to the egg mixture and stir until combined. Stir in the candied citrus peel.
