The nights are drawing in, the leaves are turning beautiful shades of red and orange, and the air is crisp. These cookies are soft, chewy, and filled with autumnal flavors that are inspired by a certain coffee chain's famous autumn drink. Perfect for Thanksgiving, Halloween, or just to enjoy in a cozy chair with your favorite book.

Tips:

- For chewier cookies, use a combination of light and dark brown sugars as the sweeteners. Brown sugar contains molasses, which gives cookies a soft and chewy texture. - Don't overmix the dough; overmixing can result in tough cookies. Mix just until the ingredients are well combined. - Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much in the oven. - Bake the cookies at a high temperature (375°F) for a short amount of time (10-12 minutes). This will help create chewy cookies with a crispy exterior. - For extra flavor, try adding a teaspoon of ground cinnamon, nutmeg, or ginger to the dough. You could also add a cup of chopped walnuts or pecans. - If you don't have a cookie scoop, use two spoons to drop the dough onto the baking sheet.

This recipe for Chewy Spice Cookies without Molasses provides excellent guidelines to help you bake delicious treats with a soft and chewy texture.
