Tips:

  • Mise en Place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and avoid scrambling during the cooking process.
  • Choose the Right Chicken: For this recipe, it's best to use chicken thighs or drumsticks. They have more flavor and will stay moist during cooking.
  • Brown the Chicken: Browning the chicken before adding the sauce will give it a nice caramelized flavor. Make sure to brown the chicken in batches so that it doesn't overcrowd the pan and steam instead of browning.
  • Use a Dutch Oven or Large Pot: You'll need a large pot or Dutch oven to cook the chicken and sauce. This will give you enough room to stir the chicken and vegetables without overcrowding the pot.
  • Simmer the Chicken: Once you've added the sauce to the chicken, bring it to a boil, then reduce the heat to low and simmer for at least 30 minutes. This will allow the flavors to meld and the chicken to become tender.
  • Add Vegetables: Add the vegetables towards the end of the cooking time so that they retain theiré®®heid and crunch.
  • Serve with Rice: Chicken Afritada is traditionally served with rice. You can also serve it with mashed potatoes or noodles.
  • Conclusion:

Chicken Afritada is a delicious and easy-to-make Filipino chicken stew. It's a perfect dish for a weeknight meal or a special occasion. With its tender chicken, flavorful sauce, and colorful vegetables, Chicken Afritada is sure to be a hit with everyone at the table.
