CHICKEN SPAGHETTI SQUASH

Chicken Spaghetti Squash image

In this twist on a classic Southern dish, the noodle-like strands of crisp-tender squash find their way into a creamy chicken and vegetable casserole.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h20m

Yield 4 servings

Number Of Ingredients 10

1 large spaghetti squash (about 2 1/2 pounds)
2 tablespoons olive oil
One 10-ounce package sliced mushrooms
1 red bell pepper, diced
4 scallions, thinly sliced, white and green parts separated
1/2 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1 cup half-and-half
2 cups shredded rotisserie chicken (skin and bones discarded)
3 cups shredded Cheddar

Steps:

  • Preheat the oven to 425 degrees F. Cut the squash in half crosswise using a serrated knife. Dig out and discard the seeds with a spoon. Place into an 8-by-8-inch microwave-safe casserole dish with 2 tablespoons water. Cover the dish with plastic wrap and microwave on high until the squash is very tender and the inside can easily be flaked with a fork, 13 to 14 minutes. Use a fork to scrap the sides of the squash, separating the strands. Leave the scraped strands in the squash. Drain and dry the casserole dish.
  • Meanwhile, heat the oil in a large oven-proof skillet over medium-high heat. Add the mushrooms and cook, stirring often, until they have released most of their moisture and start to brown, about 5 minutes. Add the bell pepper, scallion whites, cayenne pepper, 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the peppers are soft, about 5 minutes. Add the half-and-half and bring to a boil. Reduce the heat to medium and simmer until the liquid has reduced slightly and starts to thicken, 5 to 7 minutes.
  • Fold in the chicken and 2 cups Cheddar and stir until the cheese has melted. Add the spaghetti squash strands and stir until well combined. Transfer the squash mixture to the casserole dish and sprinkle the top with the remaining Cheddar. Bake until the cheese is melted and bubbling, 17 to 20 minutes. Let rest 5 minutes. Sprinkle with the scallion greens before serving.

CHICKEN PARM-STUFFED SPAGHETTI SQUASH RECIPE BY TASTY

Chicken Parm-Stuffed Spaghetti Squash Recipe by Tasty image

Here's what you need: large spaghetti squash, boneless, skinless chicken breasts, eggs, flour, italian bread crumb, marinara sauce, shredded mozzarella cheese, grated parmesan cheese, italian seasoning, salt, pepper, oil

Provided by Tasty

Categories     Dinner

Yield 2 servings

Number Of Ingredients 12

1 large spaghetti squash
2 boneless, skinless chicken breasts, cut into strips
2 eggs, beaten
flour
italian bread crumb
marinara sauce
shredded mozzarella cheese
grated parmesan cheese
italian seasoning, to taste
salt, to taste
pepper, to taste
oil, for frying

Steps:

  • With a sharp knife, slice the squash in half. (If the squash is too tough - puncture in several places forming a dotted line around the squash. Microwave for 3-5 minutes to soften. Allow to cool before cutting in half - following the dotted line).
  • Scoop out the seeds - brush with oil, salt, and pepper.
  • Roast face down in a preheated oven at 375˚F (190˚C) for 35-40 minutes (until a fork can easily pierce the skin).
  • Meanwhile - Slice the chicken breasts into strips. Season with salt and pepper.
  • Place flour, beaten egg, and breadcrumbs into three separate bowls.
  • Coat each strip with flour, then egg, and then roll in bread crumbs.
  • Pour oil in a cast-iron skillet to come ¼ inch up the side. Heat the oil over medium-high heat.
  • Fry the chicken strips (in batches if necessary) until golden brown on all sides and cooked through. Transfer to paper towels and remove pan from heat.
  • Once the squash has finished roasting - remove from the oven and let it set for a few minutes before turing over and pulling at it with a fork.
  • Shred the inside of each squash, being careful not to poke through the skin.
  • Pour marinara sauce over shredded squash. Top with chicken strips, then more marinara, and finish with mozzarella and parmesan cheese, and a pinch of Italian seasoning.
  • Return to the oven to bake for 10-15 minutes until the cheese has melted.
  • Enjoy!

CHICKEN AND BROCCOLI TWICE-BAKED SPAGHETTI SQUASH

Chicken and Broccoli Twice-Baked Spaghetti Squash image

Provided by Katie Lee Biegel

Categories     main-dish

Time 2h5m

Yield 2 servings

Number Of Ingredients 10

1 medium spaghetti squash (2 1/2 to 3 pounds)
1 cup broccoli florets
2 cups 2% milk
1 clove garlic, smashed
4 ounces Neufchatel cheese (or 1/3 less fat cream cheese)
1/4 cup grated Parmesan
1 1/2 cups shredded mozzarella
1/4 cup Greek yogurt
Kosher salt and freshly ground black pepper
2 cooked chicken breasts, diced (use rotisserie chicken for a shortcut)

Steps:

  • Preheat the oven to 400 degrees F.
  • With a sharp knife, carefully cut about four 1/2-inch slits in the squash to allow steam to escape while it cooks. Put the squash on a baking sheet and roast for about 1 1/2 hours. Let the squash cool for about 20 minutes on the baking sheet.
  • Meanwhile, bring a pot of water to a bowl and prepare an ice water bath. Blanch the broccoli briefly in the boiling water, then transfer to the ice bath to cool. Drain and set aside.
  • Cut the squash in half lengthwise and use a spoon to scoop out the seeds. With a large fork, pull the squash fibers away from the outer peel (use a towel to hold the squash in place if necessary). Reserve the squash and the outer peel.
  • Preheat the broiler.
  • Put the milk and garlic in a saucepan over medium-high heat and heat until it just begins to simmer, about 3 minutes. Reduce the heat to medium, add the Neufchatel cheese, Parmesan and 1 cup of the mozzarella and stir until melted. Turn off the heat, stir in the yogurt and season with salt and pepper. Remove the garlic. Add the squash, chicken and broccoli and toss to coat. Divide the mixture between the reserved squash peels. Top with the remaining 1/2 cup mozzarella.
  • Place the stuffed squash onto a baking sheet and broil until the cheese is melted and bubbly, a few minutes.

Time 2h

Yield 6

Number Of Ingredients 12

1 (3 pound) spaghetti squash
2 tablespoons olive oil
1 onion, thinly sliced
2 cloves garlic, minced
1 green bell pepper, diced
2 tablespoons paprika
1 teaspoon salt
1 teaspoon caraway seeds
ground black pepper to taste
3 skinless, boneless chicken breast halves
1 (14.5 ounce) can whole peeled tomatoes, drained
½ cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Using a skewer or fork, pierce squash in several places. Place whole squash on a baking sheet; roast for 45 minutes. Turn squash over and roast for an additional 10 minutes. Set aside to cool.
  • Heat olive oil in a large skillet over medium-high heat. Cook and stir onion, garlic, green bell pepper, paprika, salt, caraway seeds and ground black pepper in the hot oil until onion is soft and translucent, about 5 minutes. Remove from skillet and set aside, leaving olive oil in pan.
  • Reduce heat to medium and cook chicken breasts in the same skillet until browned, the juices run clear, and meat is no longer pink inside, turning once, about 10 minutes per side. Remove chicken breasts and slice on the diagonal. Return chicken and onion mixture to the pan; stir in tomatoes. Bring chicken mixture to a simmer.
  • Slice squash in half and scoop out seeds with a spoon. Using a fork, scrape spaghetti-like strands of squash from the peels. Combine squash with chicken and vegetables, increase heat, and bring to a boil. Reduce heat to low and simmer to combine flavors, about 10 minutes. Stir in sour cream if desired.

CHICKEN ENCHILADA STUFFED SPAGHETTI SQUASH RECIPE - (4.4/5)

Chicken Enchilada Stuffed Spaghetti Squash Recipe - (4.4/5) image

Provided by á-43854

Number Of Ingredients 19

Enchilada Sauce:
2 small spaghetti squash, cut in half and seeded
1 tablespoon oil
salt and pepper to taste
1/2 pound chicken, cooked and shredded
2 cups enchilada sauce (see below)
1/2 cup black beans (optional)
1/2 cup corn (optional)
1/4 cup cilantro, torn
1/2 cup cheddar cheese, shredded
1/2 cup monterey jack cheese, shredded
1 tablespoon oil
1 small onion, diced
1 clove garlic, grated
1 teaspoon cumin, toasted and ground
1 (28 ounce) can diced tomatoes
1-2 chipotle chilies in adobo
1 teaspoon oregano
salt and pepper to taste

Steps:

  • Brush the inner flesh of the spaghetti squash with oil, season with salt and pepper and roast, skin side up, in a preheated 400F oven until tender, about 30 minutes. Mix the chicken, enchilada sauce, beans, corn and cilantro, divide the mixture between the spaghetti squash and top with the cheese. Sauce: Heat the oil in a pan over medium heat. Add the onion and saute until tender, about 5-7 minutes. Add the garlic and cumin and saute until fragrant, about a minute. Bring to a boil, reduce the heat, simmer for a few minutes and season with salt and pepper.

Tips:

  • Choose a ripe spaghetti squash. Look for a squash that is firm and has a deep yellow color. Avoid squash that has any soft spots or bruises.
  • Roast the spaghetti squash before cooking it. Roasting the squash helps to caramelize the natural sugars and gives it a slightly nutty flavor. You can roast the squash in the oven or on a grill.
  • Use a fork to scrape the spaghetti squash into strands. Once the squash is roasted, use a fork to scrape the flesh into long, thin strands. This will make it easier to eat and will help the sauce to coat the squash evenly.
  • Add your favorite sauce to the spaghetti squash. You can use any type of sauce that you like with spaghetti squash. Some popular options include tomato sauce, pesto, or Alfredo sauce.
  • Top the spaghetti squash with your favorite toppings. Some popular toppings for spaghetti squash include grated Parmesan cheese, cooked chicken or shrimp, and roasted vegetables.

Conclusion:

Spaghetti squash is a delicious and healthy alternative to pasta. It is low in calories and carbohydrates, and it is a good source of fiber and vitamins. With its mild flavor and versatile texture, spaghetti squash can be used in a variety of dishes. Whether you are looking for a quick and easy weeknight meal or a more elaborate dinner party dish, spaghetti squash is a great option.
