1 (15-oz.) can chickpeas, rinsed
1 lime
8 sprigs cilantro
¼ cup plain whole milk Greek yogurt
Kosher salt
2 links fresh chorizo (about 8 oz. total), casings removed
4 tostada shells

Steps:

  • Measure out ½ cup chickpeas; reserve remaining chickpeas for another use. Finely grate zest of lime into a small bowl. Cut lime in half and squeeze juice from one half into bowl with zest. Cut remaining half into wedges; set aside for serving.

½ pound dry garbanzo beans
1 red bell pepper
1 green bell pepper
1 tablespoon canola oil
4 red potatoes, cut into 1/2-inch cubes
9 ounces Spanish-style chorizo, cut into 1/2-inch cubes
1 yellow onion, cut into large chunks
8 cloves garlic, or more to taste
1 teaspoon paprika
½ teaspoon salt, or more to taste
¼ cup dry sherry, or more to taste

Steps:

  • Put garbanzo beans into a large container; add enough cool water to cover by several inches. Soak beans 8 hours to overnight. Drain and rinse before using.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
  • Halve both the red bell pepper and green bell pepper from top to bottom. Remove and discard the stem, seeds, and ribs. Arrange pepper halves with cut sides down onto the prepared baking sheet.

1/2 cup chopped walnuts
2 tablespoons olive oil
1 small onion (diced)
3 garlic cloves (minced)
2 teaspoons smoked paprika
1 teaspoon ground cumin
1/2 teaspoon ancho chile powder
1/4 teaspoon dried thyme
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper (or more, to taste)
1/4 teaspoon black pepper
Generous pinch ground cloves
1/4 teaspoon salt (or more to taste)
1 tablespoon red wine vinegar
6 corn tortillas
Cooking oil or spray
1 ripe avocado (pitted and peeled)
1 cup unflavored soy or almond milk
1 tablespoon lime juice
1/2 teaspoon salt (or more to taste)
Shredded lettuce
Diced tomato

Steps:

  • Place the chickpeas and walnuts into the bowl of a food processor fitted with an S-blade. Pulse 4 or 5 times, just until the chickpeas are chopped and crumbly, being careful not to overdo it.
  • Coat the bottom of a medium skillet with oil and place it over medium heat. When the oil is hot, add the onion and sauté until soft and translucent, about 5 minutes. Add the garlic and sauté about 1 minute more, until very fragrant.   • While the shells bake, place all ingredients into a blender and blend until smooth. Taste test and season with additional salt if desired.

8 corn tortillas
2 tbsp vegetable oil
1 lime
10 sprigs cilantro
1 7-oz container Fage whole milk Greek yogurt
salt
8 oz fresh chorizo
1 can chickpeas, drained

Steps:

  • Preheat the oven to 350F. Place tortillas on a baking sheet (use two if baking 8 at once) and brush both sides with oil, using 1 tbsp for every 4 tortillas. Top with a wire rack to keep the tortillas flat. Bake 15-18 minutes, rotating halfway through, until crisp. Dab excess oil with paper towel if desired.
  • Zest the lime into a small bowl (use two small bowls if you need to make a less-cilantro version). Halve the lime and squeeze the juice into the bowl(s). Finely dice the cilantro stems and add them to the lime zest and juice. Add the yogurt and a pinch of salt. Stir well; taste and adjust salt if needed.
  • Heat a nonstick skillet over medium heat and add the chorizo, stirring to break up the meat. After a few minutes add the drained chickpeas. Continue to cook, smashing some of the beans with the back of the spoon or spatula, until the meat is cooked through and beginning to crisp.

corn oil or canola oil, for frying
6 -8 corn tortillas
2 pinches sea salt
1 (14 ounce) can refried beans
1/4 lb bulk chorizo sausage (or one fresh link)
1 cup monterey jack pepper cheese (combination) or 1 cup mexican cheese (combination)
1 romaine lettuce hearts or 1/2 head shredded iceberg lettuce
2 plum tomatoes, diced or 8 grape tomatoes, quartered
diced avocado

Steps:

  • Heat 1/8 to 1/4-inch oil over medium high heat. Fry tortillas 30 seconds on each side to light golden, 1 tortilla at a time. Drain tortillas on paper towels or brown paper sack. Season with a little sea salt while hot.

1 small Spanish onion, chopped fine

  • Put 6 tablespoons of the olive oil, and the 2 tablespoons of vinegar in a bowl and whisk together.
  • Taste, and add more sherry vinegar, if desired, season with salt and pepper, and set aside.

  • Cut the meat into 1/4 inch thick slices, then cut each slice in half, making half moon shapes.
  • Heat the remaining olive oil in a small skillet over med/high heat.
  • Add the onion and saute for 2-3 minutes.
  • Add the sausage and cook for about 3 minutes, or until it's cooked through.
  • Remove the sausage and onions from pan with a slotted spoon and add to the dressing while still hot, and stir.
  • Drain the can of chickpeas, rinse with water and then drain again.
  • Add the chickpeas to the bowl with the other ingredients, and mix well.
  • Let mixture cool.
  • Just before serving, adjust the seasoning if needed.
  • Serve topped with the fresh oregano and nice chunks of bread, enjoy!

4 cups peeled and finely grated cassava (about 4 pounds)
3 cups peeled and finely grated tanier (yautia) or taro root (about 2 1/2 pounds)
3/4 cup Annatto Oil
1 cup finely chopped cured Spanish chorizo (about 7 ounces)
1 cup cooked chickpeas
1/2 cup finely chopped roasted and peeled red pepper
1/4 cup finely chopped fresh cilantro
1/4 cup olive oil
1 tablespoon coarse salt
1/2 teaspoon freshly ground pepper
15 large fresh or frozen banana leaves, ribs removed, cut into 6-by-7-inch pieces
Dipping Sauce for Chickpea and Chorizo Pasteles

Steps:

  • Place cassava and tanier in separate fine sieve placed over medium bowls. Cover with plastic wrap and refrigerate overnight.
  • In a large bowl, combine cassava and tanier; discard any accumulated liquid. Stir in annatto oil until evenly colored. Add chorizo, chickpeas, red pepper, cilantro, olive oil, salt, and pepper. Stir to combine. Taste, and adjust seasoning. Set filling aside.
