300g ginger nut biscuit , roughly crushed
140g crystallised stem ginger , finely chopped
300g plain chocolate
100g butter , diced
100g golden syrup

Steps:

  • Line a 20 x 30cm tin with baking parchment. Mix the biscuits with most of the ginger, then set aside. Melt the chocolate, butter and golden syrup in a bowl set over a pan of simmering water, stirring occasionally, until smooth and glossy. Pour this over the biscuit and ginger mixture and mix together well.
  • Tip the mixture into the prepared tin and sprinkle over the reserved ginger, then flatten the top lightly - it doesn't need to be completely smooth. Chill for at least 2 hrs, or overnight, before cutting into small squares.

100 g unsalted butter
185 g chocolate
2 tablespoons golden syrup
225 g ginger nut biscuits (crushed)
100 g hazelnuts, toasted and chopped roughly

Steps:

  • Lighty oil a 18cm/7inch sandwich tin.
  • In a saucepan heat the butter 100g/4oz of chocolate and golden syrup, stir until melted.
  • Remove from heat and stir in the biscuit crumbs and 3/4 of the nuts.
  • Press warm mixture into tin, melt remaining chocolate, then spoon on top and sprinkle over remaining nuts.
  • Chll at least an hour before serving.

250 g unsalted butter
1 1/2 cups caster sugar
1 cup plain flour, sifted
1 cup walnuts, chopped
1 cup hazelnuts, chopped
3 free-range eggs
1 free-range egg yolk
225 g good quality dark chocolate

Steps:

  • Preheat the oven to 180°C.
  • In a small saucepan or a stainless steel bowl over a larger saucepan of simmering water, melt the butter and chocolate, stirring until combined.
  • In a large bowl, beat the eggs, yolk and sugar until pale.
  • Fold in the chocolate mixture, flour and nuts until just combined.
