1/4 cup water
1 1/2 cups fresh or frozen (partially thawed) unsweetened whole strawberries, sliced
1 cup mashed very ripe bananas (2 medium)
1/4 cup packed brown sugar
1 1/3 cups soymilk
2/3 cup fat-free egg product
1 teaspoon vanilla
4 cups 1-inch-cubes white whole-grain bread or French bread
1/4 cup miniature semisweet chocolate chips
Frozen (thawed) fat-free whipped topping

Steps:

  • In 1-quart saucepan, stir together granulated sugar, cornstarch and water. Stir in 1/2 cup of the strawberries. Heat to boiling, stirring frequently. Reduce heat to low. Cook 3 to 5 minutes, stirring frequently, until slightly thickened. Cool 10 minutes. Stir in remaining 1 cup strawberries. Cover and refrigerate until ready to serve.

  • Unfold the puff pastry. Spread the chocolate hazelnut spread onto the middle third.
  • Arrange the sliced bananas on top of the spread in a single layer. Bananas may slightly overlap.
  • Preheat oven to 400°F (220°C)
  • Cut out a triangle of the top right corner of the pastry. Repeat on the other side.
  • Cut diagonal slits along both sides of the pastry. Each will be around 1 inch (2 ½ cm) thick.

3/4 loaf Texas toast thick bread
9 large marshmallows
3 large eggs
2 teaspoons vanilla extract
2 tablespoons cinnamon
1 cup white sugar

  • 1. 1) cut the Texas toast thick bread into chunks 1/2 inch big and set aside in large bowl.
  • 2. 2) next in a medium sized bowl mix together all the remaining ingredients except for the marshmallows, until it is well blended then pour over the bread in the larger bowl and let sit until most of the liquid is absorbed into the bread -- you may also use a spoon to push in stubborn bits down into the liquid until all of it is completely soaked -- once it is completely soaked -- spray a 9 x 10 glass baking dish with spray oil and then pour in the bread mixture -- once this is done then push the marshmallows into the mix distributing them as evenly as possible -- put into a 360 degree fahrenheit oven (preheated of course) and let bake until
  • golden brown and a toothpick comes out clean, if it does not come out and the top is browned then turn down oven to 320 degrees fahrenheit until an inserted toothpick comes out clean -- take out of oven and let cool or serve immediately with cream, milk or ice cream over it -- makes a great and easy desert.
  • Note::the marshmallows will melt completely and it will be extra moist in those areas where they were -- or you may take the marshmallows and melt them after everything has baked and pour them over the top of the bread pudding and then put under the broiler on low for several minutes until they turn a golden color -- great alternative if you want to really see and taste the marshmallow more -- feel free to also add nuts or other fruit to the mix before baking to your taste. I plan to try it with black walnuts next, yum!

1 ½ cups white sugar
6 tablespoons all-purpose flour
¼ teaspoon salt
4 large egg yolks, beaten

1 (11 ounce) box vanilla wafer cookies
3 medium bananas, sliced, or to taste

Steps:

  • Combine milk and chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted and mixture is hot, about 5 minutes.

1/3 cup unsalted butter, at room temperature
1/2 cup sugar
2 large eggs
1 cup mashed ripe banana
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1/2 cup semi-sweet chocolate chips
1/2 cup chopped pecans, lightly toasted
3 cups half-and-half cream
1 tablespoon vanilla extract
6 ounces semisweet chocolate, chopped
3 large eggs
1/2 cup sugar
1/2 cup mashed ripe banana
1 dash fine salt

Steps:

  • BANANA BREAD: Beat butter & sugar until light & fluffy; add eggs, 1 at a time, beating well after each addition.
  • Stir in banana & vanilla; Sift flour, baking powder, baking soda & salt, add to banana mixture, stirring just until blended.
  • Stir in chocolate chips & pecans and scrape batter into a greased 9 inch square pan; bake in preheated 350F oven for 30 to 35 minutes or until a cake tester comes out clean.
  • Cool in pan on a rack for 15 minutes; turn out & cool completely.
  • BREAD PUDDING: Grease a 9 inch square pan & line with parchment so that some of the parchment hangs over the sides.
  • Cut banana bread into one inch cubes & layer in pan.
  • Heat cream & vanilla to just below a simmer; pour over chocolate, whisking gently to melt.
  • In a separate bowl, whisk eggs, sugar, banana & salt; slowly add the hot cream mixture, whisking constantly until blended.
  • Strain the chocolate custard mixture over the cubed banana bread, press down to soak & let sit for 15 minutes.
  • Place the bread pudding dish into a large baking pan with a 2 inch lip; pour an inch of boiling water into the baking pan.
  • Bake in a 300F preheated oven for 55 to 65 minutes or until a cake tester inserted into the centre of the cake comes out clean.
  • Remove the pan from the water bath & let cool; to serve, use edges of parchment to lift out, cut into squares & serve warm or room temperature.
