Time 2h30m

Yield 8 servings

Number Of Ingredients 4

4 medium ripe but firm bananas
8 wooden craft sticks
3 tablespoons finely chopped lightly salted peanuts
6 ounces good quality dark chocolate (60 to 70 percent cocoa solids), chopped

Steps:

  • Peel, then cut each banana in half crosswise and insert a craft stick into each half. Place on a tray, cover with plastic wrap and place in the freezer until frozen, about 3 hours.
  • Place the peanuts in a shallow dish or on a plate. Melt the chocolate in the top of a double boiler over slightly simmering water, over the lowest possible heat, stirring frequently. Make sure the water is not touching the bottom of the top pan. Pour the melted chocolate into a tall glass. Dip each frozen banana into the chocolate, turning it to coat, and immediately roll in the peanuts. Place on a tray covered in waxed paper. Serve immediately or wrap individually in plastic wrap or waxed paper and freeze for up to 2 weeks.

Number Of Ingredients 5

3 ripe bananas
9 wooden ice cream sticks or skewers
2 cups semi-sweet chocolate chips
2 tbs butter
1-1/2 cups coarsely chopped, unsalted, roasted peanuts (optional)

Steps:

  • Peel bananas, cut each into thirds and insert wooden stick into each banana piece, and place on wax paper covered tray cover. Cover. Freeze until firm. In top of double boiler over hot water(not boiling), melt chocolate chips and shortening. Remove bananas from freezer just before dipping. Dip each piece into chocolate mix covering completely and roll in peanuts. Cover and return to freezer.

Tips:

  • To make your chocolate-covered banana pops even more indulgent, use high-quality chocolate. A semisweet or dark chocolate with a cocoa content of at least 70% will give you the best results.
  • If you don't have any popsicle sticks, you can use wooden skewers or even plastic straws.
  • To make sure your chocolate-covered banana pops are evenly coated, dip them in the chocolate twice.
  • If you want to add some extra flavor to your chocolate-covered banana pops, you can sprinkle them with chopped nuts, crushed cookies, or even a little bit of sea salt.
  • To save time, you can freeze your chocolate-covered banana pops in advance. They will keep in the freezer for up to 2 weeks.
