CHOCOLATE CHERRY THUMBPRINTS
A very pretty holiday cookie - a ring of chocolate with a pink filling and a cherry in the center. Plan ahead -these need an hour of chilling time. I use Ghirardelli brand cocoa powder, which I think makes these extra rich.

Tips:
- Use high-quality chocolate for the best flavor. A semisweet or bittersweet chocolate with a cocoa content of at least 60% is recommended.
- Make sure the butter and cream cheese are softened to room temperature before mixing. This will help to ensure a smooth and creamy filling.
- Chill the dough for at least 30 minutes before baking. This will help to prevent the cookies from spreading too much in the oven.
- Use a cookie scoop to measure out the dough for each cookie. This will help to ensure that all of the cookies are the same size and shape.
- Bake the cookies until they are just set in the center. Overbaking will make the cookies dry and crumbly.
- Allow the cookies to cool completely before dipping them in chocolate. This will help to prevent the chocolate from melting.
- Use a variety of toppings to decorate the cookies, such as chopped nuts, sprinkles, or dried fruit.
Conclusion:
Chocolate covered cherry thumbprints are a delicious and festive treat that are perfect for any occasion. They are easy to make and can be customized to your liking. With a few simple tips, you can create perfect chocolate covered cherry thumbprints that will be enjoyed by everyone.
