CHOCOLATE CURLS FOR DEVIL'S FOOD CUPCAKES

Chocolate Curls for Devil's Food Cupcakes image

Use the curls to decorate our Devil's Food Cupcakes. This recipe is from "Martha Stewart's Cupcakes."

Provided by Martha Stewart

Categories     Food & Cooking

Number Of Ingredients 1

1 block of good-quality chocolate

Steps:

  • Use a vegetable peeler to slice strips from a slightly warm block of good-quality chocolate (heat in microwave for 5-second intervals, checking after each, until just warm to the touch; do not overheat). To produce tight curls, start from the far edge of the chocolate and move the peeler toward you. The delicate curls are best used immediately; you can even shave the curls right onto a cupcake.

1/2 cup cake flour
1/2 cup natural cocoa
3/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup reduced-fat sour cream
1/4 cup lowfat buttermilk
2 tablespoons unsalted butter
1/4 cup canola oil
1/2 cup dark brown sugar

Combine butter, oil and brown sugar in the bowl of a stand mixer and mix on high speed, scraping down sides of bowl, until sugar has dissolved and mixture is light in color, about 1 minute. Add egg and egg white and beat an additional 1 minute. Add 1/3 of flour-cocoa mixture, then 1/3 sour cream buttermilk mixture, mixing well after each addition. Repeat with remaining dry and wet ingredients. Distribute batter evenly among 8 cupcake tins. Bake for 15 to 17 minutes, or until a toothpick inserted into cupcake comes out clean. Add chocolate and stir until melted and icing is the consistency of thick pancake batter; add more milk if necessary. While still warm, top each cupcake with 1 1/2 to 2 teaspoons icing. Let icing harden completely, about 10 minutes.
  • Place cream cheese in a small microwave-save bowl and microwave on high for approximately 10 to 15 seconds, until cream cheese is melted but before it begins to bubble. Add confectioners' sugar and stir until sugar is dissolved. Let mixture cool slightly and transfer to a small plastic bag. Snip just the very bottom corner of the bag, then force icing to bottom of bag. Pipe a squiggle of icing down the center of each cupcake.

DEVIL'S FOOD CUPCAKES

Devil's Food Cupcakes image

Based on a recipe from Cook's Country magazine, February/March 2006. Makes 24 cupcakes, although it can be easily halved. The editors say, "If you don't have bar or block chocolate on hand, use semisweet chips in the cake and frosting." I frost these using recipe #414787 or recipe #414801. Did you know that unfrosted cupcakes can be stored in an airtight container at room temperature for up to 3 days? They may also be individually wrapped in plastic and frozen in a zipper-lock bag for up to 1 month.

Tips:

  • Use high-quality chocolate: The quality of the chocolate you use will directly impact the taste of your curls, so it's important to use a high-quality chocolate that is at least 70% cocoa solids.
  • Temper your chocolate: Tempering your chocolate is a process that helps to stabilize the cocoa butter in the chocolate, resulting in a smooth, shiny finish and a more pronounced snap. You can temper chocolate by following these steps:
    1. Finely chop the chocolate.
    2. Place 2/3 of the chocolate in a heatproof bowl set over a saucepan of simmering water, stirring constantly until the chocolate is melted and smooth.
    3. Remove the bowl from the heat and add the remaining 1/3 of the chocolate, stirring until melted and smooth.
    4. Pour the chocolate onto a marble slab or baking sheet and spread it out with a spatula until it is about 1/8-inch thick.
    5. Use a metal scraper to scrape the chocolate back and forth across the marble or baking sheet until it begins to thicken and lose its shine.
    6. Once the chocolate is thick and no longer shiny, it is tempered and ready to use.
  • Use a sharp knife: A sharp knife will help you create thin, even curls. If your knife is dull, it will tear the chocolate and create uneven curls.
  • Work quickly: Chocolate curls are best made when the chocolate is still slightly warm and pliable. If the chocolate is too cold, it will be difficult to curl and may break. If the chocolate is too warm, it will be too soft and will not hold its shape.
  • Be patient: Making chocolate curls takes a little bit of practice. Don't get discouraged if your first few attempts are not perfect. Just keep practicing and you'll eventually get the hang of it.

Conclusion:

Chocolate curls are a beautiful and delicious way to decorate cakes, cupcakes, and other desserts. They are also a great way to add a touch of elegance to your holiday baking. With a little practice, you can easily make your own chocolate curls at home. So next time you're looking for a special way to dress up your desserts, give chocolate curls a try.
