CHOCOLATE GLAZE OR FROSTING

Chocolate Glaze or Frosting image

This is very quick to prepare and can be used immediately after making as a glaze to drizzle on your cake or dessert. You can let it sit a few minutes and it will thicken up into a delicious and creamy frosting. Or add a little more powdered sugar to thicken it even more. I have no idea of the number of servings because it would depend on what you were using it for. So I just stuck a number in because I had to put something there. But I would probably double it for a two layer cake. But for a glaze over a cake or dessert this would probably be plenty.

CHOCOLATE GLAZE

Chocolate Glaze image

This thin chocolate glaze is the perfect icing for a quick cake, doughnut, or dessert topping. The icing firms up to make a glossy finish.

Provided by Diana Rattray

Categories     Dessert     Ingredient     Cake

Time 10m

Number Of Ingredients 4

2 tablespoons butter
2 ounces unsweetened chocolate (chopped)
1 cup confectioners' sugar
2 tablespoons boiling water

Steps:

  • Gather the ingredients.
  • Combine the butter and chocolate in a saucepan over low heat and stir until melted. (Be careful not to overheat the chocolate as it could seize.) Alternatively, put the chocolate and butter in a microwave-safe bowl and microwave on medium for about 1 minute. Stir and continue to heat for about 15 seconds at a time, stirring between intervals, until the chocolate and butter are melted and smooth.
  • Sift the confectioners' sugar into a small bowl.
  • Stir the sifted confectioners' sugar into the melted butter and chocolate. Beat the mixture, adding small amounts of boiling water until thinned as desired. If you happen to find it too thin, add a little more powdered sugar. If too thick, add more hot water.
  • Slowly drizzle the chocolate glaze from the pot or bowl over your cooled, finish baked good. If desired, use a spatula to evenly distribute. How long the glaze will take to harden will depend on both the temperature of the glaze and the room. Once cool, it will harden.

CHOCOLATE WATER GLAZE

Chocolate Water Glaze image

Found this recipe in 'The Perfect Cake' by Susan G. Purdy. I used it on RhondaJ's BEST EVER Banana Cake with Cream Cheese Frosting (#67256), instead of the cream cheese frosting. It pairs wonderfully with the banana cake. Very rich, and it offsets the sweetness of the cake. This glaze sets with a fine gloss and holds up well in hot weather. The consistency is rather fudge-like - creamy and smooth. You must whisk in enough water in the beginning (all at once) to prevent chocolate from seizing. Cakes coated with this glaze can be frozen. This recipe makes enough to glaze one 9-inch 2 or 3 layer cake.

Provided by WaterMelon

Categories     Dessert

Time 10m

Yield 2 1/2 cups, 16 serving(s)

Number Of Ingredients 2

12 ounces semisweet chocolate or 12 ounces bittersweet chocolate, chopped. (2 cups)
6 tablespoons very hot water, more if needed.

Steps:

  • Double Boiler Method: Melt chocolate in a pan set over hot (not boiling) water.
  • Stir until smooth.
  • Microwave Method: Melt chocolate in a microwave-safe bowl.
  • Microwave at LOW or MED for 30 sec.
  • Remove and stir.
  • If not completely melted, continue microwaving.
  • Stir until smooth.
  • Once chocolate is completely melted and smooth, whisk in the hot water all at once (not slowly or the chocolate may seize) until the mixture is satiny smooth.
  • It will have consistency of softly whipped cream.
  • If you wish the glaze to be thinner, whisk in another TB (or more) of hot water.
  • Glaze the cake- tilt it to help glaze flow and/or use a spatula to spread.
  • Let the glaze set.
  • If the weather is too warm, refrigerate the cake to let glaze set.
  • The gloss disappears in hot weather but returns at room temperature.
  • Beware of fingerprints on the glaze; they show.

EASY CHOCOLATE GLAZE

Easy Chocolate Glaze image

Share this kitchen-tested recipe from the Betty Crocker Kitchens with someone you love.

Provided by By Betty Crocker Kitchens

Categories     Dessert

Number Of Ingredients 3

1/2 cup semisweet chocolate chips
2 tablespoons butter or margarine
2 tablespoons corn syrup

Steps:

  • Place chocolate chips, butter and corn syrup in 2-cup microwavable measuring cup. Microwave uncovered on Medium (50%) 1 to 2 minutes or until chocolate can be stirred smooth.

Tips:

  • Use high-quality chocolate: The type of chocolate you use will greatly affect the flavor of your glaze or frosting. Use a good-quality chocolate that has a high cocoa content (at least 60%).
  • Temper your chocolate: Tempering your chocolate will help to stabilize it and make it less likely to seize. This process involves melting the chocolate slowly and then rapidly cooling it.
  • Use a double boiler: A double boiler is a great way to melt chocolate without burning it. Fill the bottom pot with water and bring it to a simmer. Then place the chocolate in the top pot and stir until it is melted.
  • Add flavorings: You can add a variety of flavorings to your glaze or frosting, such as vanilla extract, almond extract, or peppermint extract. You can also add spices, such as cinnamon or nutmeg.
  • Use the right consistency: The consistency of your glaze or frosting will depend on how you plan to use it. If you are using it to drizzle over a cake, you will want a thin consistency. If you are using it to frost a cake, you will want a thicker consistency.

Conclusion:

Chocolate glaze and frosting are two delicious ways to add richness and flavor to your desserts. With a little practice, you can easily make your own chocolate glaze or frosting at home. Experiment with different recipes and flavorings to find the perfect combination for your next dessert.
