3/4 pound fresh Bing cherries, pitted, coarsely chopped
1/4 cup sugar
1 tablespoon brandy (optional)
1/8 teaspoon almond extract
1 quart purchased vanilla ice cream, slightly softened
1/2 cup (about 3 ounces) miniature semisweet chocolate chips

  • For sauce:
  • Bring whipping cream to simmer in heavy medium saucepan; remove from heat. Add chopped chocolate; whisk until smooth.
  • For crust and filling:
  • Preheat oven to 350°F. Grind cookies in processor until coarse crumbs form. Add butter and blend until crumbs cling together and are evenly moistened. Press crumb mixture over bottom and up sides of 9-inch-diameter glass pie dish. Bake crust until slightly puffed and darker, about 10 minutes. Cool crust on rack. 1 (6 ounce) chocolate cookie pie crust
1 1/2 cups semi-sweet chocolate chips
3 tablespoons butter
1/2 cup heavy cream (whipping cream)
1 tablespoon coffee-flavored liqueur
1 pint cookies & cream ice cream, softened
1 pint chocolate ice cream, softened (I used double chocolate with fudge chunks)
2 tablespoons coffee-flavored liqueur, divided

Steps:

  • Over a double boiler on low heat, combine chocolate chips, heavy cream, and butter. Stir until chips are melted and mixture is smooth. Remove from heat, stir in coffee liqueur. Let cool for 10 minutes.
  • Spread 1/2 C sauce on bottom and up the sides of the chocolate cookie crust, letting it pool in the bottom. Shake gently to level out. Freeze for 15 minutes.

For crust
1 1/2 cups finely ground or crushed chocolate wafer cookies (about 7 ounces)
6 tablespoons (3/4 stick) unsalted butter, melted
For bittersweet chocolate sauce
3/4 cup whipping cream
2 tablespoons (1/4 stick) unsalted butter
2 tablespoons light corn syrup
8 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
1 teaspoon vanilla extract
2 pints chocolate-chocolate chip ice cream
1 pint chocolate fudge brownie ice cream
1 pint cookies-and-cream ice cream
2 ounces good-quality white chocolate (such as Lindt or Baker's), chopped

Steps:

  • Make crust:
  • Preheat oven to 325°F. Butter 9-inch-diameter metal pie pan or glass pie dish. Mix cookie crumbs and melted butter in bowl until crumbs are evenly moistened. Press crumb mixture firmly onto bottom and up sides of prepared pan. Bake until crust is set, about 10 minutes. Cool completely.
  • Make bittersweet chocolate sauce:
  • Combine cream, butter, and corn syrup in medium saucepan. Bring to simmer. Remove from heat. Add bittersweet chocolate; let stand 1 minute. Whisk until melted and smooth. Stir in vanilla. Let stand at room temperature until cool and slightly thickened, about 20 minutes.
  • Place alternate scoops of chocolate-chocolate chip ice cream, chocolate fudge brownie ice cream, and cookies-and-cream ice cream in single layer in cooled crust. Drizzle 1/2 cup chocolate sauce over ice cream. Freeze pie until sauce sets, about 10 minutes. Top pie with scoops of remaining ice cream, alternating flavors and mounding in center. Drizzle 1/3 cup sauce over. Freeze pie until firm, at least 2 hours. (Can be prepared 5 days ahead. Cover tightly and keep frozen. Cover and refrigerate remaining chocolate sauce.)
  • Stir white chocolate in top of double boiler set over barely simmering water just until melted and smooth. Using small spoon, drizzle white chocolate in thin lines over ice cream pie. Freeze until white chocolate is firm, about 10 minutes. Stir bittersweet chocolate sauce over low heat just until warm. Serve pie with warm chocolate sauce.

1 1/4 cups crushed chocolate-covered mint cookies
1 cup fat-free chocolate fudge topping

Steps:

  • Spread 1 pint of the ice cream in pie crust. Sprinkle 1 cup of the crushed cookies over ice cream. Cover and freeze 1 hour.
  • Spread remaining pint of ice cream over cookies. Cover and freeze about 3 hours or until firm.
  • Let stand at room temperature about 10 minutes before cutting. Serve with fudge topping; sprinkle with remaining cookies. Cover and freeze any remaining pie.

This is an easy recipe....very little work involved and quick to put together. The major time involved is leaving the pie in the freezer to set! The 6 hours and 15 minutes of freezer time are not included in the prep or cooking time!

21 cream-filled chocolate sandwich cookies (I use Oreos)
1/2 cup dry-roasted unsalted peanuts
1/4 cup butter, melted
3 pints chocolate ice cream, softened
8 (1 5/8 ounce) packages peanut butter cups, coarsely chopped (I use Reeses)
1 (8 ounce) jar fudge sauce
1/4 cup strong brewed coffee
2 tablespoons coffee liqueur (optional)

Steps:

  • Process cookies and peanuts in a food processor until finely crumbled, Add butter, and process until blended.
  • Press crumb mixture into a 9-inch deep-dish pieplate; freeze for 15 minutes.
  • Stir together the ice cream and chopped candy; spoon into the piecrust. Freeze for at least 6 hours. Remove from the freezer and let it stand 15 minutes before serving.
  • Heat fudge sauce in a small saucepan over low heat, stirring constantly. Remove from heat; stir in coffee and coffee liqueur. Drizzle over pie.

Nonstick vegetable oil spray
1 1/2 cups graham cracker crumbs
6 tablespoons (3/4 stick) unsalted butter, melted
Filling
1 quart chocolate ice cream, slightly softened until spreadable
2 cups coarsely chopped chocolate-covered graham crackers
1 1/2 cups marshmallow creme
2 cups mini marshmallows
Sauce
1/2 cup whipping cream
5 ounces imported milk chocolate, finely chopped

Steps:

  • For crust:
  • Preheat oven to 350°F. Spray 9-inch-diameter metal pie pan with nonstick spray. Mix graham cracker crumbs and melted butter in bowl to blend. Transfer to prepared pie pan. Press crumb mixture onto bottom and up sides of pan. Bake until crust is set and golden, about 11 minutes. Cool completely.
  • For filling:
  • Using offset spatula, spread half of softened ice cream evenly in crust. Sprinkle 1 cup chopped chocolate-covered graham crackers evenly over. Spread remaining ice cream over, covering graham crackers completely. Freeze until firm, at least 4 hours.
  • Drop marshmallow creme by tablespoonfuls over top of pie. Using moistened fingertips, spread in even layer, covering top of pie completely. Sprinkle mini marshmallows evenly over, pressing slightly to adhere. Cover and freeze until firm, about 4 hours.
  • For sauce:
  • Bring whipping cream to boil in heavy small saucepan. Remove from heat. Add chocolate; let stand 2 minutes to soften, then whisk until melted and smooth. (Pie and sauce can be made 3 days ahead. Keep pie frozen. Cover and chill sauce; rewarm sauce over low heat just until pourable before serving.)
  • Preheat broiler. Cover pie crust edges with foil collar. Broil pie just until marshmallows are golden brown, watching closely to avoid burning and rotating pan to brown evenly if necessary, about 2 minutes. Transfer pie to platter and serve immediately with warm sauce.

2 c cold milk
1-1/2 c chocolate ice cream, softened
2 box 4 serving size vanilla or chocolate instant pudding
1 graham cracker pie crust (6oz)

Steps:

  • 1. Thoroughly blend milk and ice cream in a bowl. Add pudding mixes, gradually blend slowly on low speed for approximately one minute.
  • 2. Pour immediately into the pie shell. Chill until set (1 hour or more). Can be put into the freezer for a quicker set.

Tips:

  • To achieve a smooth and creamy chocolate ice cream filling, ensure that all ingredients are chilled before starting. This will prevent the ice cream from becoming icy or grainy.
  • When making the Oreo cookie crust, pulse the cookies in a food processor or blender until they are finely ground. This will help the crust to hold together better.
