2/3 cup sugar
1/3 cup light corn syrup
1/3 cup water
1/4 cup apple cider
3 tablespoons unsalted butter
1/2 cup raisins
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground coriander
1 teaspoon ground ginger
2 large eggs, beaten to blend
1/4 cup dark rum
5 ounces good-quality white chocolate, coarsely chopped

Steps:

  • Preheat oven to 325°F. Arrange bread on large baking sheet; bake until dry, about 10 minutes. Transfer bread to large bowl. Increase temperature to 350°F.
  • Stir sugar, syrup and water in heavy medium saucepan over low heat until sugar dissolves. I tried these last night at a Christmas party and just HAD to get the recipe before I left. Super easy and oh so delicious! They taste just like chocolate mousse. I'm not exactly sure how many shots this makes, it all depends on the size of plastic shot glasses/containers used. I'm making a batch tonight, just for fun, but I'm going to fill parfait glasses with it for a Christmas eve dessert (for the grown-ups). I will make it the same way for the kids, only a "virgin" alternative, replacing the booze with more milk. I hope you enjoy! *Note: If you've never heard of "Rum Chata", just google it. It's a rum liqueur. (The stupid ingredient list keeps posting it incorrectly). I've drank "Rum Chata", before as a sipper, but I've also been told that it's great as an alternative to creamer in your morning coffee for a quick "hang-over" cure.

1 (4 ounce) package jello chocolate fudge instant pudding mix
1 cup milk
1 cup rum, chata
1 (8 ounce) container Cool Whip Topping (thawed in fridge)

Steps:

  • Combine first 3 ingredients in a medium bowl. Beat with a wire whisk or electric blender on low for 1 - 2 minutes. Let stand for 5 minutes to soft-set.
