CHRIS' CHOCOLATE CHIP COFFEE BARS

Chris' Chocolate Chip Coffee Bars image

I got this recipe from a friend in the early 70's, and have been making them for years... I don't like coffee, but I sure love these delicious bars! This is one of those recipes that everyone LOVES... A cross between a Chocolate Chip Cookie and a Congo Bar with a slight coffee flavor, and not cakey at all... VERY GOOD! Serving size depends how big or small you cut them.

These bars offer the best of both worlds, cookie-wise: The edges are crisp and browned if you like crust, but the center cuts are extra gooey and rich.

Provided by Food Network Kitchen

Categories     dessert

Time 1h45m

Yield 24 bars

Number Of Ingredients 8

1 cup (2 sticks) unsalted butter
1 1/2 cups firmly packed dark brown sugar
2 large eggs
1 teaspoon pure vanilla extract
2 cups all-purpose flour (see Cook¿s Note)
1/2 teaspoon baking soda
1 teaspoon fine salt
One 12-ounce bag (a scant 2 cups) semisweet chocolate chips

Steps:

  • Position the rack in the middle of the oven and preheat to 350 degrees F.
  • Put the butter in a microwave-safe bowl, cover and microwave on medium power until melted. Alternatively melt the butter in a small saucepan. • Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a spoon or spatula, taking care not to over mix. The batter should be thick and all of the flour mixture should be fully incorporated. Fold in the chocolate chips.
  • Spread the batter evenly in the prepared pan. Bake until the edges are browned and the center is completely set, about 30 minutes. Cool completely, at least one hour, cut into 24 pieces and serve.

CHOCOLATE CHIP COOKIE BARS

Chocolate Chip Cookie Bars image

You can bake these up to ten days ahead and store in the freezer, without cutting into bars; wrap the baking sheet tightly in plastic.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Yield Makes about 3 1/2 dozen

Number Of Ingredients 9

1 1/2 cups (3 sticks) unsalted butter, room temperature, plus more baking sheet
4 cups all-purpose flour
2 teaspoons baking soda
3/4 teaspoon salt
1 cup granulated sugar
1 1/2 cups packed light-brown sugar
2 large eggs
1 tablespoon pure vanilla extract
3 cups mixed semisweet- and milk-chocolate chips (about 18 ounces)

Steps:

  • Preheat oven to 350 degrees, with rack in center. Generously butter a 12-by-17-inch rimmed baking sheet; set aside. In a medium bowl, whisk together flour, baking soda, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugars on medium speed until light and fluffy, about 2 minutes. Add eggs and vanilla; mix until well combined. Add flour mixture; beat on low speed until just combined. Beat in chocolate chips.
  • Spread dough on prepared baking sheet. Bake, rotating sheet halfway through, until edges are brown and top is golden, 40 to 45 minutes. Transfer to a wire rack; let cool completely on baking sheet. Use a serrated knife to cut into 1 1/2-by-4-inch bars.

Tips:

  • Use high-quality chocolate chips. This will make a big difference in the flavor of your bars.
  • Don't overmix the batter. Overmixing will make the bars tough.
  • Chill the dough before baking. This will help the bars hold their shape.
  • Bake the bars until they are just set. Overbaking will make them dry.
  • Let the bars cool completely before cutting them. This will help them stay intact.

Conclusion:

These chocolate chip coffee bars are a delicious and easy treat that can be enjoyed by people of all ages. They are perfect for a quick snack or breakfast on the go. With a few simple ingredients and a little bit of time, you can have a batch of these bars ready to enjoy in no time.
