CHERRY CHEESECAKE BARS

Cherry Cheesecake Bars image

We love the cheesecake bars, but adding cherry pie filling is decadently good.

Provided by Cindy Talley

Categories     Other Desserts

Time 45m

Number Of Ingredients 7

2 pkg cream cheese, room temperature
1 can(s) cherry pie filling
1 egg, separated
1 c sugar
1 tsp almond extract
2 can(s) refrigerated crescent rolls, the sheet kind
2 Tbsp sugar

Steps:

  • 1. Beat together cream cheese, egg yolk, sugar and almond extract until smooth.
  • 2. Spray a 9 x 13 pan with cooking spray and unroll 1 sheet of crescent dough. If you don't have the sheets, and are using regular crescent rolls, pinch together the perforations.
  • 3. Pour cream cheese mixture over the dough, and then spread the cherry pie filling over that. Top with second crescent dough sheet.
  • 4. Brush the top with the reserved egg white, and sprinkle with sugar. I used a specialty almond/amaretto flavored sugar, but regular white or sparkling sugar would be nice as well.
  • 5. Bake at 350 degrees for 30 minutes, or until nicely browned. Cool on rack and then refrigerate.
  • 6. The filling will be quite runny while warm, but sets up nicely after refrigeration.

CHRISTMAS CHERRY CHEESECAKE BARS

Christmas Cherry Cheesecake Bars image

This dessert is so good it seems a shame to have Christmas in the title. This is so good year around. Even though it is cheesecake it does not need to be baked in a cheesecake pan -it can be baked in a pie pan or in a square pan. This is so simple , you will make it often using different fruit each time.

Provided by Pat Duran

Time 30m

Number Of Ingredients 11

CRUST:
1/3 c cold butter
1/3 c brown sugar, firmly packed
1 c flour
FILLING:
8 oz cream cheese, softened
1/4 c granulated sugar
1 large egg
1 Tbsp lemon juice
1/4 c green maraschino cherries
1/4 c red maraschino cherries

Steps:

  • 1. Crust: Cut butter in chunks, add brown sugar and flour. Mix at low speed. Mix at medium speed for 1 minute. Reserve 1/2 cup crumbs. Press remaining crust mixture into an 8-inch square baking pan. Bake in center of oven at 350^ for 10-12 minutes. --- Filling: Beat cream cheese, sugar, egg and lemon juice together at medium speed until fluffy about 2 minutes. Stir in chopped fruit. Spread filling over hot crust, sprinkle with reserved crumbs. Continue baking for 18-20 minutes or until filling is set and lightly browned. Cool in refrigerator.

Tips:

  • Use high-quality ingredients. This will make a big difference in the taste of your cheesecake bars.
  • Make sure your cream cheese is softened to room temperature before using it. This will help it mix smoothly with the other ingredients.
  • Don't overbeat the cheesecake batter. Overbeating will make the cheesecake tough.
  • Bake the cheesecake bars in a water bath. This will help prevent them from cracking.
  • Chill the cheesecake bars for at least 4 hours before serving. This will allow them to set properly.

Conclusion:

These Christmas Cherry Cheesecake Bars are the perfect holiday dessert. They're easy to make, delicious, and festive. They're sure to be a hit with your family and friends.
