CINNAMON BLUEBERRY JAM
Watching my grandmother can hundreds of jars of tomatoes, peaches and pears inspired me to try making jams and jellies myself. I can remember going down into her cellar as a girl-all those jars on the shelves gave me such a warm, homey feeling! My family enjoys this jam on warm corn muffins, or blueberry. The cinnamon's a bit of a surprise. -Barbara Burns, Phillipsburg, New Jersey

Tips for Making the Best Cinnamon Blueberry Jam
- Pick plump blueberries. Avoid berries that are bruised or have soft spots. Use fresh or frozen blueberries for best results. - Try different types of cinnamon. Ceylon cinnamon has a milder flavor, while Saigon cinnamon has a stronger, spicier flavor. - Don't overcook the jam. The jam will thicken as it cools, so don't cook it for too long or it will become too thick and sticky. - Use a candy thermometer to make sure the jam reaches the right temperature. The jam should be at 220 degrees Fahrenheit (104 degrees Celsius) when it is done. - Let the jam cool completely before storing it. This will allow the jam to thicken and develop its full flavor. Conclusion
