1/4 lb margarine
1 onion, minced
1/2 green pepper, chopped
1 garlic clove, crushed
4 (6 1/2 ounce) cans minced clams, reserving juice
1 cup clam juice, use reserved and add more if needed for a total of 1 cup
1 tablespoon lemon juice
1/2 teaspoon oregano
1/4 teaspoon pepper
1 pinch parsley flakes
1 dash Tabasco sauce
8 ounces seasoned stuffing mix, Pepperidge Farm is good
parmesan cheese, for the top

Steps:

  • Saute first 4 ingredients in a large skillet, simmering for a few minutes.
  • Combine and add the next 7 ingredients and then add the stuffing slowly until you have an oatmeal consistency.
  • Place in a casserole dish and sprinkle with Parmesan cheese.
  • Bake at 325 degrees F. for 20-30 minutes.

34 Ritz crackers, crushed
6 1/2 ounces minced clams (fresh lobster, langastanos, scallops, shrimp, or fresh white fish may be substituted)
1/2 cup margarine, melted
lemon juice, to taste
salt and pepper

Steps:

  • Crush crackers.
  • Mix clams or other seafood and crackers together.
  • Put in small individual casserole dishes of your choice. The amount this will serve, depends on what size you use. I use about 8"x3" individual casserole dishes.
  • Divide the seafood mixture between the casserole dishes.
  • Add melted butter over the top of each casserole dish.
  • Squirt desired amount of lemon juice over top.

4 slices bacon
¼ cup olive oil
1 large onion, chopped
2 tablespoons dried oregano
2 teaspoons kosher salt
1 ½ teaspoons garlic powder
1 teaspoon ground black pepper
2 bay leaves
4 cloves garlic, thinly sliced
4 (6.5 ounce) cans minced clams, drained with juice reserved
½ lemon, juiced
1 dash hot pepper sauce (such as Tabasco®)
1 cup dry bread crumbs, or more as needed
½ cup grated Parmesan cheese, divided
1 lemon, cut into wedges
1 tablespoon fresh parsley leaves

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate, reserving about 1 tablespoon of the bacon grease in the skillet. Crumble the bacon and set aside.
  • Preheat an oven to 375 degrees F (190 degrees C). Grease a casserole or pie dish with butter.
  • Heat the reserved bacon grease and olive oil in the skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Season with oregano, salt, garlic powder, pepper, and bay leaves. Stir in the garlic, and cook until the garlic has softened, about 5 minutes more. 1 tablespoon Worcestershire sauce

1 (20 ounce) can cream-style corn
milk
2 eggs, lightly beaten
1 cup cracker crumb
1/4 cup finely chopped onion

1 can(s) (small can) clams, chopped, undrained
1/2 pkg extra wide egg noodles
1 can(s) (small can) sliced mushrooms, undrained
1 can(s) cream of mushroom soup, undiluted
1 c 4-cheese blend of shredded cheeses (i used mozzarella, provolone, romano & parmesan)

Steps:

  • 1. Spray crock pot with cooking spray.
  • 2. DO NOT DRAIN LIQUID FROM CANS.
  • 3. Cook egg noodles in boiling, lightly salted water for about 2 minutes only. Drain.
  • 4. Add 1/2 noodles into crock pot.
  • 5. Add tuna & clams with liquid. (Or if you like, you can just use 2 cans of tuna, undrained)

4 tsp. lemon juice
1 small onion
1 stick butter
1 1/2 cups bread crumbs
