COCA-COLA CHOCOLATE CAKE

Coca-Cola Chocolate Cake image

I've had this recipe for probably 30 years. It's been awhile since I made it but it's nice and moist, wonderful flavor. Several already on this site but none with these exact ingredients. The icing is a bit thin if you follow directions, it's more like a glaze, so I think it needs maybe another cup of powdered sugar.

IDAHOAN COCA-COLA® CAKE

Idahoan Coca-Cola® Cake image

This recipe originally came from one of our favorite Food Network stars, Nigella Lawson. A little alteration here and there (like including Idahoan's Original Mashed Potatoes) to this wonderfully rich cake made with Coca-Cola® and a new favorite was created.

Provided by Idahoan

Categories     Trusted Brands: Recipes and Tips     Idahoan®

Yield 12

Number Of Ingredients 12

2 cups Idahoan® Boxed Original Mashed Potatoes, dry
1 stick unsalted butter
8 ounces Coca-Cola® (or Guinness® for an adult cake)
½ cup unsweetened cocoa powder
1 ¾ cups superfine sugar
½ cup sour cream
2 medium eggs
1 tablespoon vanilla
2 ½ teaspoons baking soda
2 (8 ounce) packages cream cheese
⅓ cup heavy cream
¾ cup powdered sugar

Steps:

  • Preheat oven to 350 degrees F. Coat the sides and bottom of spring form pan with nonstick cooking spray.
  • Melt stick of butter in a large, wide sauce pan.
  • Add cola, cocoa powder and superfine sugar and whisk until smooth. Remove from heat.
  • Whisk sour cream, eggs and vanilla thoroughly until almost a batter-like consistency and add slowly into the slightly cooled butter mixture.
  • Add dry Original Mashed Potato flakes and baking soda. Stir thoroughly. The batter will have a slightly grainy appearance but don't be concerned.
  • Pour into spring form pan and bake for 45 minutes to an hour. Test center of cake with a wooden toothpick (cake is done when the toothpick comes out clean).
  • Cool and remove from spring form pan. Note: This is a very dark and dense cake.
  • Frosting: The cream cheese should be at room temperature. Add cream and powdered sugar and mix in a food processor or with a large whisk. Adjust powdered sugar and cream to ensure a nicely thick frosting that is still spreadable.
  • Frost just the top of the cake once it's unmolded and serve chilled. This cake is even better the next day!

Number Of Ingredients 10

1 box Chocolate Fudge Cake Mix
1 small box (4 ounce) Instant Chocolate Pudding
Ingredients listed on back of cake mix box (eggs & oil - water not needed)
1 1/3 cups Coca Cola
1 stick butter
3 tablespoon unsweetened Cocoa
4 -6 tablespoons heavy cream or milk
2 cups packed Powdered sugar
1 teaspoon vanilla
1/2 cup chopped pecans (opt)

Steps:

  • Preheat oven to 350 F degrees. Spray 9x13 baking pan with nonstick cooking spray. Prepare cake mix according to package directions but instead of adding water, you will replace that amount with Coca-Cola. Add in dry instant pudding mix to the batter and mix as well. Pour batter into baking dish and bake according to package directions, usually around 35-39 minutes. Just before cake is ready to come out of the oven, start making frosting. In a medium saucepan, over medium heat, start melting one stick of butter. Add in cocoa powder and heavy cream (or milk) and stir. Then stir in confectioners' sugar. Stir briskly with a whisk to get all the lumps out. Take mixture off the heat and add in vanilla extract. Once cake comes out of oven pour frosting over warm cake. Do your best to spread it out evenly. Sprinkle chopped nuts on top, if using. Serve warm with a scoop of vanilla ice cream.

My mom used to make this "coke cake" when I was a little girl. I found the recipe recently and it was just as my mama used to make!

  • 7. Add vanilla extract and pecans. Spread over hot cake. Frosting will melt into cake but will also make a fudgey topping over the cake also.
  • 8. Cool then cut into squares and serve alone or with ice cream.

Tips:

  • Selecting the right ingredients is crucial for a successful Coca-Cola cake. Use fresh ingredients like butter, eggs, and buttermilk for the best flavor and texture.
  • Make sure all ingredients are at room temperature before mixing. This will ensure that they blend together evenly and properly.
  • Do not overmix the batter. Overmixing can result in a tough, dry cake. Mix only until the ingredients are well combined.
  • Bake the cake in a preheated oven. This will help the cake rise evenly and prevent it from sinking.
  • Allow the cake to cool completely before frosting it. This will help the frosting set properly and prevent it from sliding off the cake.
  • If you are making the cake ahead of time, store it in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.

Conclusion:

Coca-Cola cake is a classic Southern dessert that is easy to make and always a crowd-pleaser. With its rich, moist texture and delicious chocolate frosting, it's the perfect cake for any occasion. Whether you're a seasoned baker or just starting out, I encourage you to try this recipe. With a little care and attention, you'll be able to create a Coca-Cola cake that will impress your friends and family.
