PINA COLADA FLUFF

Pina Colada Fluff image

This pina colada fluff recipe is from one of my grandma's vintage cookbooks. Instead of alcoholic rum, you could use rum extract. -Crystal Jo Bruns, Iliff, Colorado

Provided by Taste of Home

Categories     Side Dishes

Time 15m

Yield 7 servings.

Number Of Ingredients 7

1 can (20 ounces) crushed pineapple, undrained
1 package (3.4 ounces) instant vanilla pudding mix
1 teaspoon coconut rum or rum extract
2 cups miniature marshmallows
1 cup sweetened shredded coconut, toasted
1/2 cup finely chopped pistachios, toasted
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a large bowl, combine pineapple, pudding mix and rum. Add marshmallows, coconut and pistachios. Fold in whipped topping. Chill until serving.

Nutrition Facts : Calories 369 calories, Fat 14g fat (10g saturated fat), Cholesterol 0 cholesterol, Sodium 172mg sodium, Carbohydrate 57g carbohydrate (46g sugars, Fiber 2g fiber), Protein 3g protein.

Tips:

  • Use fresh coconut. Fresh coconut meat has a sweeter, more delicate flavor than dried or shredded coconut. If you can't find fresh coconut, you can use unsweetened shredded coconut, but the flavor will be less pronounced.
  • Don't overbeat the egg whites. Overbeaten egg whites will make the fluff too stiff. Beat them until they are stiff peaks but not dry.
  • Fold the egg whites into the coconut mixture gently. This will help keep the fluff light and airy.
  • Chill the fluff before serving. This will help it set and make it easier to scoop.

Conclusion:

Coconut cherry fluff is a light, refreshing, and delicious dessert that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you like it sweet, tart, or somewhere in between, coconut cherry fluff is sure to please. So next time you are looking for a quick and easy dessert, give this recipe a try. You won't be disappointed!
