It is a refreshing and flavorful combination of fresh vegetables, beans, corn, and a tangy dressing. The name "cowboy caviar" is a bit of a misnomer, as the dish does not contain any actual caviar. Black beans absorb other flavors superbly, so try to leave this for at least 20 minutes before serving to allow the different flavors to blend together.

COLORFUL COWBOY CAVIAR

This is a great make-ahead dip and a welcome change from the basic cheese and sour cream type dips that show up a every gathering. The nice thing is the longer it marinates, the better it gets. Frees up your time for other dishes. It's also a very "forgiving" recipe...get creative and add or delete vegetables to suit your taste. I particularly like to serve this with Fritos but again, choose the chip of your choice. :-)

COWBOY CAVIAR

Always the biggest hit at the party! I am asked to make this to every party I am ever invited to! You can make it spicy or mild, you control that by how much hot sauce or the peppers you choose. I tend to add peppers in the summer when I have them in the garden, I don't use them in the winter as they are so expensive once the weather starts to get chilly! It is a great app to make the night before, you can let the bean mixture sit for hours, the longer it sits, the better the flavors get!! Try this one, it is YUMMY!!!
