CONFETTI COLESLAW WITH CILANTRO
This recipe is traditionally called "California Cole Slaw", but I made some changes by reworking the recipe. The pretty contrast of colors reminded me of confetti, hence the name. I found the original version "California Cole Slaw" recipe while going through my deceased mother-in-laws recipes. Thought I'd make a couple ingredient changes and wala. Here's the finished product. It is even kid friendly. Hope you enjoy it.

CONFETTI COLESLAW
It is almost the end of summer and bar-b-que's will be replaced by stews and chile cook-offs. Steps:
- 1. Prepare all vegetables and toss together in a large bowl.
- 2. Mix together salad dressing ingredients and blend well. Pour over cabbage mixture and stir well. Refrigerate for 1 hour or more. Serve.
- 3. Note: The rice vinegar gives the dressing a nice "kick" so use a good rice vinegar.
Tips:
- Choose the right cabbage. Green cabbage is the most common type used for coleslaw, but you can also use red cabbage or a mix of both. If you're using a head of cabbage, be sure to remove the tough outer leaves and core.
- Shred the cabbage thinly. This will help the coleslaw dressing to coat the cabbage evenly.
- Add other vegetables for extra flavor and texture. Some common additions include carrots, celery, bell peppers, and onions.
- Use a creamy dressing. Mayonnaise-based dressings are the most popular, but you can also use yogurt-based or vinegar-based dressings.
- Add some sweetness. Sugar or honey are common sweeteners, but you can also use fruit juice or dried fruit.
- Add some acidity. Vinegar or lemon juice will help to balance out the sweetness of the dressing.
- Season to taste. Salt and pepper are essential seasonings, but you can also add other spices, such as garlic powder, onion powder, or celery seed.
- Chill the coleslaw before serving. This will help the flavors to meld and the dressing to thicken.
Conclusion:
Confetti coleslaw is a delicious and versatile side dish that can be enjoyed at any time of year. It's a great way to add some extra vegetables to your meals, and it's also a popular choice for potlucks and picnics. With so many different variations to choose from, there's sure to be a confetti coleslaw recipe that everyone will love.
