Steps:
- Preheat the oven to 375 degrees F.
- Butter a 10 x 3 x 1 1/2-inch round baking dish and sprinkle the bottom and sides with 1 tablespoon of the granulated sugar.
- Beat the eggs and the 1/3 cup of granulated sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 3 minutes. On low speed, mix in the flour, cream, vanilla extract, lemon zest, salt, and pear brandy. Set aside for 10 minutes.
- Meanwhile, peel, quarter, core, and slice the pears. Arrange the slices in a single layer, slightly fanned out, in the baking dish. Pour the batter over the pears and bake until the top is golden brown and the custard is firm, 35 to 40 minutes. Serve warm or at room temperature, sprinkled with confectioners' sugar, and creme fraiche.
PEAR CLAFOUTIS
If you don't want to make a crust but want something tartlike for your Thanksgiving dessert, a clafoutis, which is something like a cross between a flan and a pancake, is a great choice. It's a very easy dessert, yet it's always impressive.

PEAR CLAFOUTIS
It sounds odd to say that a recipe's biggest problem is that it looks too good, but that's sort of the case with this pear clafoutis, a crustless custard fruit tart that often looks a lot sweeter and richer that it actually is. Usually made with cherries, this rustic French dessert adapts easily to any kind of seasonal fruit. If desired, brush top with warmed fruit preserves and honey and garnish with whipped cream, creme fraiche, or ice cream.

CRANBERRY PEAR CLAFOUTI
A very pleasant breakfast treat, from Morning Glories by Donna Leahy. Simple, with lovely flavor. This fruit combination is quite nice, but other fruits you have on hand would work as well.

Steps:
- Heat the oven to 425 degrees. Butter a deep 9- or 10-inch pie plate or a gratin dish of similar size. Sprinkle it with a tablespoon or so of sugar, then swirl dish to coat evenly. Invert to remove excess.
- Beat eggs well, then add remaining sugar. Beat until smooth. Add flour, and beat again until smooth. Add the half-and-half or milk and salt, and whisk until smooth.
- Coarsely chop cranberries and walnuts. If using a food processor, do not overprocess -- just pulse until chopped. (It's very fast.) Put cranberry mixture in pie plate, and pour batter over it.
- Bake for about 30 minutes, or until clafoutis is nicely browned on top and a knife inserted into it comes out clean. Sift some confectioners' sugar over it, and serve warm or at room temperature.

Steps:
- Preheat the oven to 425°F. Butter a deep 9- or 10-inch pie plate, round porcelain dish, or gratin dish of similar size. Sprinkle it with a tablespoon or so of the sugar, then swirl the dish to coat evenly with sugar; invert to remove the excess.
- Beat the egg well, then add the remaining sugar; beat until smooth. Add the flour and beat again until smooth. Add the half-and-half and salt and whisk once more until smooth.
- Coarsely chop the cranberries and walnuts; you can do this in a food processor if you like (it's very fast), but be careful not to overprocess-you want to break up the cranberries, not mince them. Put the cranberry mixture in the bottom of the dish and pour the batter over it.
- Bake for 20 to 30 minutes, or until the clafouti is nicely browned on top and a knife inserted into it comes out clean. Sift some confectioners' sugar over it and serve warm or at room temperature.

Tips:
- Prep your fruits: Before starting, wash and dry the cranberries and pears. Cut the pears into thin slices and set aside.
- Use a blender: To save time and ensure a smooth batter, use a blender to combine the milk, eggs, sugar, almond extract, vanilla extract, and salt.
- Grease your baking dish: Generously grease a 9-inch pie plate or baking dish with butter to prevent the clafoutis from sticking.
- Arrange the fruits: Place the pear slices in a single layer on the bottom of the prepared baking dish. Then, sprinkle the cranberries evenly over the pears.
- Pour the batter: Carefully pour the blended batter over the fruits in the baking dish.
- Bake until golden brown: Bake the clafoutis in a preheated oven at 350°F (175°C) for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let it cool: Allow the clafoutis to cool for at least 15 minutes before serving. This will help it set and make it easier to slice.
- Serve warm or cold: Cranberry-pear clafoutis can be served warm or cold. If you prefer it warm, reheat it in a preheated oven at 350°F (175°C) for 10-15 minutes before serving.
Conclusion:
This delightful cranberry-pear clafoutis is a delicious and versatile dessert that can be enjoyed for breakfast, brunch, or as an after-dinner treat. With its tender and fluffy texture, vibrant flavors, and stunning presentation, this clafoutis is sure to impress your family and friends.
