1 cup dried cranberries
2 sticks celery, thinly sliced
1 cup walnuts, roughly chopped
2 tablespoons olive oil
2 tablespoons red wine vinegar

  • Cook rice in a large saucepan of boiling water, following packet directions, until tender. Drain. Set aside to cool (see note).

3/4 cup water
3/4 cup cranberry juice cocktail
1/2 cup dried cranberries
8 oranges, peel and white pith removed, sliced into 1/2-inch-thick rounds, chilled
Fresh mint sprigs (optional)

Steps:

  • Preheat oven to 325°F. Line baking sheet with parchment paper. Mix first 5 ingredients in large bowl to blend. Add nuts; toss to coat well. Strain nuts, reserving liquid. Transfer nuts to baking sheet. Sprinkle nuts with sugar. Bake until golden brown, about 17 minutes. Cool completely.
  • Whisk 3/4 cup water, cranberry juice and reserved liquid from nuts in medium saucepan to blend. Stir in dried cranberries. Bring to boil. 1/2 cup dried cranberries
1/4 cup walnuts (chopped)
4 cups carrots (shredded)
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon orange juice

Steps:

  • Soak cranberries in very warm water for 30 minutes ~ drain well.
  • Lightly toast walnuts in a nonstick saute pan over medium heat, stirring until they begin to color and the aroma becomes apparent. Immediately remove from the pan ~ set aside ~ TO BE ADDED JUST BEFORE SERVING!
  • In a large bowl, combine carrots and olive oil ~ toss lightly to coat. Add remaining ingredients (EXCEPT WALNUTS)and mix well.

1/2 c sugar
1 pkg cranberry or rasberry jello
1/2 c chopped celery
1/2 c chopped walnuts
1 can(s) manderine oranges

Steps:

  • 1. Boil Cranberries and sugar in 1/2 cup of water about 7 minutes just until cranberrys begin to pop. While cranberries are cooking make jello according to pkg. directions
  • 2. Add nuts,celery drained oranges and cranberries. Chill until just set and stir to mix solids evenly. Chill until set or overnight
