1 pound onions, peeled, cut into1/2-inch dice
3 tablespoons chopped fresh parsley
1 tablespoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
2 tablespoons olive oil
6 bacon slices, coarsely chopped
3 3/4 cups all purpose flour
2 tablespoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
3 cups chilled whipping cream
1 large egg, beaten to blend (for glaze)

  • Cook bacon in medium skillet until crisp and brown. Using slotted spoon, transfer bacon to paper towels to drain.
  • Blend flour, baking powder, sugar, and salt in large bowl. Mix in bacon and half of roasted onion mixture. Mix in cream, tossing just until dry ingredients are evenly moistened; do not overmix. Turn dough out onto floured work surface. Knead for 5 turns to combine well. Shape into 18-inch-long log. Cut crosswise into eighteen 1-inch-thick rounds. Arrange rounds on baking sheet, spacing evenly apart. Brush each with glaze; top each with some of remaining onion mixture, pressing to adhere.

ROASTED STUFFED ONIONS WITH BACON AND HERBS

Roasted Stuffed Onions with Bacon and Herbs image

Provided by Food Network Kitchen

Time 2h30m

Yield 6 servings

Number Of Ingredients 14

6 large yellow onions (about 4 pounds)
4 slices bacon (about 3 ounces), diced
1 sprig fresh thyme
1 sprig fresh rosemary
1 sprig fresh sage
1/8 teaspoon kosher salt, plus to taste
Pinch sugar
Freshly ground black pepper, to taste
1/4 cup white wine
1/4 cup heavy cream
3/4 cup grated Gruyere cheese (about 3 ounces)
2 teaspoons Dijon mustard
1 tablespoon unsalted butter, plus for buttering the dish
1/3 cup fresh breadcrumbs

Steps:

  • Peel the onions, but leave the root end intact. Pour about 2 inches of water into a large saucepan and set up a collapsible steamer inside. Steam the onions until easily pieced by a knife, about 30 minutes. (For more tender onions you may steam them a little longer; however, they might be somewhat harder to hollow out. Either way they're delicious!) Set aside to cool. Slice off about a third of the top portion of each onion. Using a paring knife, cut out the insides of each onion, leaving about 4 outside layers intact, to make a container for stuffing. Chop the onion insides and tops. Preheat the oven to 400 degrees F. Heat a large skillet over medium-high heat. Add the bacon and cook, stirring, until crispy and the fat has rendered, about 3 minutes. Add the chopped onion, herb sprigs, 1/8 teaspoon salt, and sugar. Season with pepper and cook, stirring occasionally, until lightly browned, about 12 minutes. Add the wine and cook until dry, scrapping the bottom of the skillet with a wooden spoon to get up any browned bits, about 2 minutes. Stir in the cream and remove from the heat. Remove and discard the herb sprigs. Stir in the cheese and mustard. Lightly butter a baking dish. Season the inside of the onions with salt and pepper, and spoon the stuffing into each onion cavity, mounding it slightly on top. Set the onions in the dish. Heat the butter in the skillet. Add the breadcrumbs and stir until they absorb the butter. Spoon the buttered breadcrumbs on top of each onion. Roast the onions until well browned and heated through, about 40 minutes. Serve warm or at room temperature.

Time 45m

Yield 12 biscuits

Number Of Ingredients 11

2 strips bacon
1 small onion, chopped
3 cups all-purpose flour, plus more for dusting
1/3 cup powdered milk
5 teaspoons baking powder
1 tablespoon sugar
2 teaspoons cream of tartar
2 teaspoons kosher salt
1 stick (8 tablespoons) cold butter, cut into bits, plus 4 tablespoons butter, melted
1/2 cup shortening
1 1/2 cups buttermilk

Steps:

  • Preheat the oven to 450 degrees F.
  • In a small skillet, cook the bacon over medium heat until crisp, 5 to 7 minutes. Remove and drain on paper towels until cool, then chop into small pieces. Add the onion to the skillet with the bacon grease and cook over medium-low heat until light golden, about 5 minutes. Drain on paper towels.
  • Stir together the flour, powdered milk, baking powder, sugar, cream of tartar and salt in a medium bowl. Using a pastry cutter, cut the chilled butter bits and shortening into the dry mixture until blended thoroughly. Stir in the bacon and onion. Fold in the buttermilk until the dough comes together.

Categories     Breads

Time 20m

Yield 6 biscuits, 6 serving(s)

Number Of Ingredients 12

1 1/4 cups self-rising flour
3/4 cup cake flour
3/4 teaspoon baking soda
1 tablespoon sugar
1/2 teaspoon salt
4 tablespoons unsalted butter, very cold
4 slices bacon, rendered and small diced
1/3 cup shredded cheddar cheese
2 tablespoons chopped green onions
1 1/4 cups heavy cream
1/4 cup all-purpose flour
3 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 475°F Sift the self-rising flour, cake flour, baking powder, baking soda, sugar and salt into a large bowl. Using your fingers or a pastry cutter, work the 4 tablespoons cold butter into the flour until the pieces are pea size.
  • Add the bacon, cheddar and green onions to the flour mixture. Pour the heavy cream into the flour mixture and, with your hands or a silicone spatula, stir just until the cream and flour come together to form a dough.
  • Use 2 tablespoons of the melted butter to brush the inside of the Cast-Iron Biscuit Pan (Emeril has his own line, but I think any biscuit pan would work). Carefully spoon mixture into each well being sure to divide the mixture evenly between all wells. This will ensure even baking. Gently smooth each top with the back of a spoon or spatula. Brush the tops with the remaining tablespoon of melted butter.
  • Bake in the oven for 10 or 12 minutes, or until golden brown. Allow to cool briefly before running a thin, sharp, small blade around the edge of the biscuit pan and inverting the pan to release the biscuits.

Time 2h20m

Yield 6

Number Of Ingredients 6

6 medium yellow onions, with peel
2 cups chicken stock
1 tablespoon extra-virgin olive oil
salt and pepper to taste
3 sprigs fresh rosemary, chopped
½ cup heavy cream

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).

Pour the chicken stock over and around the onion halves, then drizzle with olive oil. Season liberally with salt, pepper and rosemary. Place on top of a cookie sheet to catch any splatters that may occur.
  • Bake uncovered for 1 hour in the preheated oven, or until onion is easily pierced with a knife and liquid has reduced by 1/2. Remove the dish from the oven, and pour the cream over the onions. Return to the oven, and continue to bake uncovered until the pan juices have thickened slightly and onions are browned, up to 30 minutes.

Tips:

  • For a flakier biscuit, use cold butter and grate it into the flour mixture. This will create small pockets of butter that will melt in the oven, creating a light and fluffy biscuit.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of milk. Let it sit for 5 minutes before using.
  • Be careful not to overmix the dough. Overmixing will make the biscuits tough.
  • When rolling out the dough, be sure to roll it out to a thickness of about 1/2 inch. If the dough is too thick, the biscuits will be dense.
  • Bake the biscuits in a hot oven. This will help them to rise quickly and evenly.
  • Serve the biscuits warm with your favorite toppings, such as butter, honey, or jam.

Conclusion:

Cream biscuits with bacon and roasted onions are a delicious and easy-to-make breakfast or brunch dish. The biscuits are light and fluffy, and the bacon and onions add a savory and flavorful touch. This recipe is sure to be a hit with your family and friends.
