4 cups cut fresh asparagus (1/2-inch pieces)
2 cups water, divided
1/4 cup finely chopped green onions or 1 teaspoon onion powder
5 tablespoons butter
5 tablespoons all-purpose flour
1/2 to 1 teaspoon salt
1/4 teaspoon white pepper
4 cups whole milk
1 tablespoon chicken bouillon granules

Steps:

  • Place asparagus in a large saucepan and cover with 1 cup water. Bring to a boil, cover and cook for 3-5 minutes or until crisp-tender. Drain, reserving liquid. , In a another saucepan, saute onions in butter until tender. Stir in the flour, salt and pepper until blended. Gradually stir in the milk, bouillon, reserved cooking liquid and remaining water. Bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly. Stir in asparagus; heat through.

6 cups chicken stock, divided
1 ½ pounds asparagus, trimmed and chopped
¼ cup butter
2 tablespoons olive oil
1 onion, chopped
2 ribs celery, chopped
2 cloves garlic, chopped
6 tablespoons all-purpose flour
1 cup half-and-half, or more to taste
1 pound processed American cheese (such as Velveeta®), cubed
salt and ground black pepper to taste

Steps:

  • Bring 4 cups chicken stock to a boil in a saucepan. Add asparagus and cook until tender, 3 to 5 minutes. Drain asparagus, reserving the stock. Set a few asparagus tips aside for garnish.
  • Heat butter and olive oil in a stockpot over medium heat. Add onion and celery and cook until tender, 6 to 8 minutes. Add garlic; cook and stir until fragrant, about 3 minutes more.
  • Stir flour into onion mixture until combined, about 2 minutes. Add remaining 2 cups chicken stock; cook and stir until thickened, about 5 minutes more. Add cooked asparagus stalks and remaining reserved asparagus-chicken stock; bring soup to a boil.
  • Heat half-and-half in a small saucepan over medium heat until warmed slightly, 1 to 2 minutes. Add warmed half-and-half to soup, reduce heat, and simmer until flavors have blended, about 10 minutes.
  • Pour soup into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Return pureed soup to stockpot. Add American cheese and stir until melted; season with salt and pepper. Garnish with asparagus tips.

½ cup chopped onion
1 (14.5 ounce) can chicken broth
2 tablespoons butter
2 tablespoons all-purpose flour

½ cup sour cream
1 teaspoon fresh lemon juice

Steps:

  • In a large saucepan, combine asparagus, chopped onion, and 1/2 cup chicken broth. Cover, and bring to a boil over high heat. Reduce heat, and simmer uncovered until asparagus is tender, about 12 minutes. Process the mixture in a blender to puree the vegetables. Set aside.

Whisk in the remaining chicken broth, and increase the heat to medium. Cook, stirring constantly until the mixture boils. Stir in the asparagus puree and the milk.
  • Put the sour cream in a small bowl, and stir in a ladleful of the hot soup. Add the sour cream mixture and the lemon juice to the soup. Stir while heating the soup to serving temperature, but don't allow it to boil. Serve immediately.

2 pounds thin fresh asparagus
2 large potatoes, peeled and diced
1 large onion, chopped
2 celery ribs, chopped
1 medium carrot, chopped
2 teaspoons dried parsley flakes
1 garlic clove, minced
2 tablespoons canola oil
2 cans (14-1/2 ounces each) chicken broth
1 teaspoon salt
1/2 teaspoon pepper, divided
1 bay leaf
2 cups cubed cooked chicken
2 cups half-and-half cream
Shaved Parmesan cheese, optional

Steps:

  • Cut tips from asparagus spears; set aside. Place stalks in a large skillet; cover with water. Bring to a boil. Reduce heat; cover and simmer for 40 minutes. Strain, reserving 4 cups cooking liquid. Discard stalks., In a Dutch oven, saute the potatoes, onion, celery, carrot, parsley and garlic in oil until vegetables are tender. 1/2 teaspoon dried thyme

3 pounds asparagus, trimmed and cut into 1-inch pieces

2 to 3 tablespoons fresh lemon juice

Steps:

  • In a large (4-quart) saucepan, melt butter over medium heat. Add shallots and thyme; cook until shallots are soft, about 5 minutes. Add flour; cook until incorporated, stirring constantly, about 1 minute.
  • Add asparagus and 6 cups water; season generously with salt. Cover, and bring to a boil.

1 onion, finely diced
salt to taste
4 cups chicken broth
2 cups water
2 pounds fresh asparagus, trimmed and cut into 1-inch pieces

½ cup heavy whipping cream
¼ cup heavy whipping cream
1 tablespoon freshly grated Parmigiano-Reggiano cheese

Steps:

  • Melt butter in a soup pot over medium heat. Add minced onion and salt; cook and stir until onion is soft and golden, about 10 minutes.

1/2 stick unsalted butter
1/2 onion, chopped, (about 1/2 cup)
1 clove garlic, crushed
Salt and freshly ground black pepper
2 pounds asparagus, ends trimmed and cut into 1-inch pieces
6 cups chicken stock
1 pint sour cream, room temperature
2 teaspoons Hungarian hot paprika, for garnish

Steps:

  • Melt butter in a large saucepan over medium-high heat. Add onion and garlic, and saute 5 minutes. Season with salt and pepper. Add asparagus and saute another 4 minutes. Add the chicken stock and bring to a boil. Reduce to simmer and cook for 30 minutes, until asparagus is very tender. *Carefully transfer to a blender and puree until smooth. Return to saucepan, stir in sour cream and season with salt and pepper, to taste. Transfer to serving bowls. Dust with paprika and serve.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

1/2 stick(s) unsalted butter
1/2 - onion, diced
1 - clove garlic, chopped
2 pound(s) asparagus, fresh
1 quart(s) chicken stock
8 ounce(s) sour cream, lite
1/4 cup(s) half and half
1/2 package(s) "simply potatoes," cubed with onion
- salt & pepper to taste

Steps:

  • Melt buter in Dutch oven over med-high heat. Add onion and garlic. Saute til onion is translucent. Do not brown onion or garlic.
  • Add asparagus which has been sliced into 1 inch lengths. Saute about 4-5 minutes.
  • Add chicken stock and bring to a boil. Reduce to simmer and cook for 30 minutes....until asparagus is very tender.
  • Let cool slightly, transfer to blender and puree until smooth. After pureeing return puree to Dutch oven, leaving approximately 1-2 cups in blender. Add potato cubes into blender and blend together. Return potato and asparagus puree to remaining puree in Dutch oven. Season with salt and pepper.
  • Add sour cream and half & half to soup mixture in Dutch oven, stirring to mix well. Heat and serve.

Tips:

  • To make the soup even creamier, use heavy cream instead of milk.
  • If you don't have an immersion blender, you can puree the soup in a regular blender or food processor.
  • For a more flavorful soup, roast the asparagus before adding it to the soup.
  • To make the soup ahead of time, prepare it up to the point of adding the cream and asparagus. Then, store it in the refrigerator for up to 3 days.
  • When you're ready to serve the soup, reheat it over medium heat until warmed through. Then, add the cream and asparagus and cook until heated through.
