Yield Makes 6 servings

Number Of Ingredients 8

1 cup bomba or arborio rice
1/4 teaspoon kosher salt
5 cups whole milk
1/2 cup sugar
1/2 teaspoon orange-flower water
1 pear, sliced
1/3 cup chopped unsalted, roasted pistachios
Honey (for serving)

Steps:

  • Bring rice, salt, and 1 1/2 cups water to a boil in a medium saucepan. Reduce heat, partially cover, and simmer until water is almost completely absorbed, 6-8 minutes.
  • Add milk, return to a simmer, and cook, stirring occasionally, until rice is tender and milk is thickened, 30-35 minutes. Add sugar and orange-flower water and cook, stirring, until sugar is dissolved, about 1 minute longer. Let cool slightly.
  • Serve rice pudding topped with sliced pear and chopped pistachios and drizzled with honey.

Tips:

  • Choose the right rice: Short-grain rice, such as Arborio or Carnaroli, is best for making creamy rice because it absorbs more liquid and becomes tender and creamy when cooked. Avoid long-grain rice, which will not become as creamy.
  • Use a heavy-bottomed pot: A heavy-bottomed pot will help to distribute the heat evenly and prevent the rice from sticking to the bottom of the pot.
  • Toast the rice before cooking: Toasting the rice before cooking helps to bring out its nutty flavor and give the finished dish a more complex flavor.
  • Use a flavorful liquid: The liquid you use to cook the rice will greatly affect the flavor of the finished dish. Try using chicken broth, vegetable broth, or even milk for a richer flavor.
  • Cook the rice slowly: Creamy rice is best cooked slowly over low heat. This allows the rice to absorb the liquid and become tender without overcooking.
  • Stir the rice frequently: Stirring the rice frequently will help to prevent it from sticking to the bottom of the pot and will also help to create a creamy texture.
  • Add cream or milk at the end of cooking: Adding cream or milk at the end of cooking will help to make the rice even creamier and richer. Be careful not to add the cream or milk too early, or it may curdle.
  • Season the rice to taste: Once the rice is cooked, season it to taste with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or herbs.

Conclusion:

Creamy rice is a delicious and versatile dish that can be served as a main course or a side dish. It is easy to make and can be customized to your liking with different flavors and ingredients. Whether you are looking for a comforting meal or a side dish to impress your guests, creamy rice is a great option.
