2 teaspoons apple cider vinegar
1 teaspoon balsamic vinegar
1/3 cup plain yogurt
1/3 cup sour cream
1 1/4 cups gorgonzola, crumbled
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • In a medium bowl, whisk together the vinegars, yogurt, and sour cream until smooth. Stir in the crumbled cheese, salt, and pepper. Chill for several hours before serving.

Tips:

  • Use high-quality ingredients. The better the ingredients, the better the dressing will taste. This means using a good quality olive oil, balsamic vinegar, and cheese.
  • Let the dressing rest. After making the dressing, let it rest for at least 30 minutes before using. This will allow the flavors to develop and mellow.
  • Adjust the flavors to your liking. If you find the dressing is too tart, add a little more honey or maple syrup. If it's too thick, add a little more olive oil or water. And if it's not salty enough, add a little more salt.
  • Use the dressing on a variety of salads. Gorgonzola dressing is great on salads that include greens, roasted vegetables, grilled chicken, or bacon.
  • Store the dressing in a jar or container with a tight-fitting lid. The dressing will keep for up to 2 weeks in the refrigerator.
